GREEK CHICKEN BOWLS

These Greek chicken bowls make for a fresh, flavorful, and filling meal. A hearty bowl is loaded with fluffy Mediterranean rice, juicy Greek chicken, crisp salad, Feta cheese all topped with a creamy tzatziki sauce. This Mediterranean inspired dish makes for the perfect weeknight dinner or meal prep!

WHAT YOU NEED-

  • Greek Chicken– For the ultimate Greek flavors I recommend that you use my Greek chicken marinade recipe. You can also use Chipotle chicken or even chicken meatballs.
  • Rice– You want to use either Mediterranean yellow rice or cilantro lime rice. Either white or brown rice will work for this recipe.
  • Salad– Adding a fresh, crisp, light cucumber and tomato salad to this salad is a must! The salad is just fresh cherry tomatoes and cucumbers tossed in lemon juice, oil, and seasonings, a simple salad.
  • Tzatziki Sauce- What brings this hearty Greek bowl all together is the creamy tzatziki sauce! You can use either store-bought or homemade tzatziki sauce.
  • Toppings– You can use your favorite toppings for these Greek bowls! Toppings like Feta cheese, olives, cilantro, pickled onions and more!

HOW TO MAKE GREEK BOWLS

This simple Greek chicken bowl recipe comes together in no time, making it the perfect weeknight dinner and great for meal prep!

  1. Prepare the Greek chicken using the desired cooking method.
  2. As the chicken is cooking, prepare your Mediterranean rice.
  3. Prepare the salad, toppings and tzatziki sauce for these Greek bowls.
  4. Once the chicken is cooked, slice or cube the chicken.
  5. Assemble the bowls: add the rice, chicken, salad and your choice of toppings into your bowl. Finish off with a drizzle or dollop of tzatziki sauce.
  6. Serve immediately with pita bread or pita chips.

QUESTIONS YOU MIGHT HAVE:

Do I have to use chicken for these Greek bowls?

No! You can totally use any of your favorite proteins! Lamb, ground beef kofta, steak, blackened salmon, or even shrimp!

Can I make these bowls ahead of time?

You can totally make this recipe ahead of time, just don’t add the salad or toppings until ready to serve. I love to prepare all my toppings and store everything in separate containers and prepare bowls all week for lunch and dinner!

How do I store leftover Greek bowls?

For longer freshness, I recommend that you store all the ingredients in separate containers. When ready to enjoy, reheat the rice and chicken and assemble the bowls.

Greek Chicken-

  • In a bowl, add all the ingredients for the marinade and mix to combine. Add the chicken to the marinade and mix until the chicken is fully coated.
    1 1/2 lb boneless skinless chicken thighs, or breast, 1/4 cup olive oil, 1/2 cup plain Greek yogurt, 1 ½ tsp salt, ½ tsp ground black pepper, ½ tsp paprika, 1 tsp Italian seasoning, 1 tsp garlic powder, ¼ tsp chili powder, ¼ tsp ground cinnamon, ½ tsp cumin
  • Cover or close the container and marinate in the fridge for 30 minutes or for up to 2-3 days in the fridge.
  • Add the chicken in a single layer to the air fryer basket. (Be sure not to overcrowd the basket.)
  • Air fry at 400°F for about 10-15 minutes, flipping halfway through. (Depending on the thickness of the chicken thighs, the cooking time might be longer.)
  • Once the chicken reaches an internal temperature of 165°F remove from the air fryer.
  • Let rest for 5 minutes, then cut into cubes or slices.

Assemble Bowls-

  • Prepare the Mediterranean rice as you cook the chicken.
  • In a bowl, combine all the ingredients for the Greek salad. Prepare all your other Greek bowl toppings.
    1 cup cherry tomatoes, halved, 1 cup fresh cucumber, sliced, 1 Tbsp lemon juice, 2 tsp olive oil, ½ tsp salt, ½ tsp Italian seasoning, ¼ tsp ground black pepper, 1 Tbsp fresh cilantro, finely chopped
  • Assemble your Greek bowls; Add rice, chicken, salad, and any other desired toppings to the bowls, evenly dividing between 4 bowls.
  • Serve immediately with pita bread or pita chips.
