CHIPOTLE CILANTRO LIME RICE

You are going to love this light and fresh cilantro lime rice! This side dish is so easy to make and pairs with so many dishes. The fluffy rice paired with seasoning, lime, and cilantro brings the ultimate flavors. This rice recipe is a Chipotle copycat recipe that is going to shock you!

WHAT YOU NEED-

  • Rice– For the best results you want to use basmati rice. You can also use regular long grain white rice, jasmine, or even brown rice!
  • Butter– You can use either butter or oil! You can use olive, vegetable, canola oil or even avocado oil. This helps the rice from being sticky and not so dry.
  • Lime Juice– Either lime or lemon juice can be used! We prefer using freshly squeezed lime juice, but you can also use the lime juice in a bottle.
  • Flavor– For the seasoning, this recipe calls for salt, pepper, and garlic powder. You can also add any other favorite seasons. For a kick you can also add red pepper flakes!
  • Cilantro– The main ingredient is fresh cilantro! You want to use fresh finely chopped cilantro for this rice recipe.

HOW TO MAKE CILANTRO LIME RICE

  1. Cooking rice can be intimidating, but you will not believe how easy this recipe comes together!
  2. Bring water to a boil and then add rice. Reduce heat and simmer with closed lid.
  3. Remove the lid and fluff the rice. Add in the rest of the ingredients and mix.
  4. Serve as desired immediately.
Rice to Water Ratio– When cooking rice, you always want to keep in mind the 1:2 ratio! For every cup of rice, you want to double the amount of water.

OTHER RICE COOKING METHODS-

  • Baked– Add water and rice into a baking dish and bake at 375F for 20 minutes. Then mix and cook for an additional 3-5 minutes or until fluffy and cooked through. Once cooked, repeat with the rest of the instructions.
  • Rice Cooker– Add the water and rice into the rice cooker and cook. Once cooked, repeat with the rest of the instructions.

Stove Top Method-

  • Bring water to a boil in a pot on medium high heat. Once boiling add the rinsed rice and reduce to medium low heat and cook with a closed lid for 12 minutes. Stirring occasionally.
  • After 12 minutes, the water should be gone leaving you with fluffy rice.
  • Remove from heat and add in the butter, lime juice, salt, pepper, garlic powder, and chopped cilantro.
  • Mix until well combined and serve immediately as desired.

Baked Method-

Notes

Storing & Reheating– Store this rice in the fridge in an airtight container for up to 3-4 days. Reheat via microwave or in a skillet with an ice cube to give the rice moisture.
