This easy chicken fajita quesadilla recipe is such a hearty and flavorful recipe. Juicy chicken, sauteed peppers and mushrooms and gooey cheesy in a golden, crispy tortilla. This quesadilla recipe is the perfect mash up of fajitas and quesadillas—easy to make, full of flavor, and sure to be a hit for dinner or game night!

WHAT YOU NEED-

  • Tortillas– You want to use medium flour tortillas for this fajita quesadilla recipe. You can also swap for low-carb tortillas, gluten free tortillas, or any other healthier tortilla options.
  • Chicken– Either boneless skinless chicken breast or chicken thighs can be used for this recipe, you can even use chicken tenderloins or shredded chicken.
  • Mushrooms– White mushrooms or portobello mushrooms work great for this fajita recipe. If you don’t like mushrooms, you can totally leave the mushrooms out!
  • Bell Peppers– Either regular bell peppers or mini bell peppers will work for these quesadillas. I like to use a variety of red and orange bell peppers. You can either slice or dice the bell peppers.
  • Jalapenos– For added flavors, canned jalapenos are added to the filling. If you don’t like spice, then you can leave out the diced jalapenos.
  • Tomatoes– Adding fresh tomatoes to the filling gives extra flavors and juices to the filling. You can use any tomatoes, like Roma tomatoes, cherry tomatoes, etc.
  • Oil– To sauté the chicken fajita quesadilla filling, you can use olive oil, vegetable oil, canola oil, or even avocado oil.
  • Flavor– To season the filling, this recipe calls for a seasoning blend using salt, pepper, and taco seasoning. You can use either homemade or store-bought taco seasoning.
  • Mayo– I like to spread a little bit of mayo onto the tortillas to avoid dry quesadillas. You can opt out of the mayo spread or swap for my Taco Bell Quesadilla sauce.
  • Cheese– Use your favorite shredded cheese for these fajita quesadillas. Cheese like Colby jack, mozzarella, taco blend or even taco blend will work.

HOW TO MAKE CHICKEN FAJITA QUESADILLAS

Have these hearty and flavorful quesadillas ready in no time!

  1. In a small ramekin, combine all the seasonings.
  2. In a large skillet, heat oil on medium high heat. Add the cubed chicken and half of the seasoning, blend and sauté until the chicken is cooked.
  3. Once the chicken is fully cooked, remove from the skillet. In the same skillet, add the sliced mushrooms and cubed bell peppers. Sauté until the veggies are tender and mushrooms are browned.
  4. Add the cooked chicken, diced tomatoes, jalapenos, and the rest of the seasoning to the skillet.
  5. Toss and allow it to cook for an additional 1-2 minutes. Remove from the heat.
  6. Layout both tortillas and spread a light amount of mayo all over both tortillas.
  7. Evenly divide the shredded cheese and fajita filling among both tortillas, adding on only half the tortilla.
  8. Fold the empty side of the tortilla over the filling, creating a mood shaped quesadilla.
  9. Add both the assembled tortillas to a large skillet and cook over medium low heat. Cook until both sides of the tortilla are crispy and golden and the cheese has melted.
  10. Remove from the skillet and slice the quesadillas into 2-3 pieces.
  11. Serve with desired sides and enjoy immediately

Instructions

  • In a small ramekin, combine salt, pepper, and taco seasoning.
  • In a large skillet, heat 2 tsp of oil on medium high heat. Once hot, add the cubed chicken and half of the seasoning to the skillet and cook for about 3-4 minutes, until the chicken is fully cooked.
  • Once the chicken is cooked, remove the chicken from the skillet. In the same skillet, add the sliced mushrooms and cubed bell peppers and sauté for 3-4 minutes, or until the veggies are tender.
  • Add the chicken, chopped jalapenos, diced tomatoes, and the rest of the seasonings to the skillet. Sauté for an additional 1-2 minutes. Remove from the heat.
  • Layout both tortillas and spread alight layer of mayo over both tortillas.
  • Add shredded cheese and then chicken fajita filling onto half of the tortilla, divide evenly between both quesadillas.
  • Fold the tortillas, creating a moon shape. Carefully add the quesadillas to a large skillet.
  • Cook the quesadillas on medium low heat until both sides of the tortillas are golden and crispy and the cheese has melted.
  • Remove from the skillet and slice the quesadillas into 2-3 pieces.
  • Serve immediately with desired sides and sauce.
