BUFFALO CHICKEN QUESADILLA
If you are looking for an easy and delicious quesadilla recipe, look no further! Spicy buffalo chicken quesadilla recipe that is packed with shredded chicken, hot sauce and cheese. Not only is this quesadilla packed with spicy and bold flavors, but it also comes together in under 15 minutes. Enjoy this quesadilla as an appetizer, snack or lunch!
WHAT YOU NEED-
- Tortillas– You want to use your favorite medium sized tortillas. Either classic flour tortillas, low-carb, gluten free, or any other tortillas you prefer.
- Chicken– This recipe calls for shredded chicken, but you can also use cubed or sliced chicken. I love making this with leftover rotisserie chicken.
- Hot Sauce– You want to use Franks buffalo hot sauce or any store-bought buffalo hot sauce you prefer. Homemade buffalo wing sauce can also be used.
- Green Onions– Adding finely chopped green onions to these quesadillas gives added flavors! You can swap for chives, cilantro, parsley or leave out all greens.
- Flavors– To season the chicken filling, this recipe just calls for a couple classic seasonings: salt, pepper, garlic powder, and paprika.
- Cheese– Any shredded cheese will work great for this quesadilla recipe. Cheese like Mexican style, taco blend, mild cheddar, mozzarella cheese or any other shredded cheese you like!
HOW TO MAKE BUFFALO CHICKEN QUESADILLAS
Have this easy chicken quesadilla recipe ready in under 15 minutes!
- In a bowl, combine all the chicken, seasonings, hot sauce and green onions.
- Layout the tortilla and add shredded cheese to half of the tortilla. Top with shredded chicken mixture, evenly dividing the filling between both quesadillas.
- Top with some more cheese and then fold creating a moon shaped quesadilla.
- Add the quesadillas to a large skillet and cook on medium heat until the tortillas are golden and the filling has melted and warmed.
- Remove from the skillet and slice into 2-3 pieces and serve with Ranch or sour cream.
AIR FRYER QUESADILLAS-
These are great to make in the air fryer!
- Spray the air fryer basket with cooking spray and add the quesadilla into the basket. (Do not overfill. Depending on your air fryer size you may need to cook in batches.)
- Give the quesadillas a light spray with cooking spray and air fry at 350°F for 6-8 minutes or until the tortillas are crispy and the filling has warmed, and cheese has melted.

Yes! This recipe is a great way to use up your leftover buffalo chicken dip!
No, you can use shredded, cubed, or sliced chicken for these quesadillas. I prefer finely cubed chicken for all my quesadillas.
Depending on how hot you think Frank’s buffalo hot sauce is, that will tell you how hot these quesadillas are. You can adjust the heat but add more or less hot sauce.
I recommend that you use medium sized burrito tortillas. You can also make small taco tortillas for mini quesadillas.
You can prepare the chicken mixture for up to 2-3 days ahead of time and store it in the fridge. When ready for a quesadilla, assemble then cook!
Once the buffalo chicken quesadillas are cooled, store in the fridge for 3-4 days. Reheat in the microwave or air fryer until warmed through and enjoy!

Easy Buffalo Chicken Quesadilla Recipe
Ingredients
- 2 medium flour tortillas
- 1 cup shredded cheese
Chicken Filling-
- 1 cup shredded chicken or cubed
- 1/2 cup buffalo hot sauce
- ¼ tsp salt
- ¼ tsp ground black pepper
- ¼ tsp garlic powder
- ¼ tsp paprika
- 1 Tbsp fresh green onion finely chopped
Instructions
- Add shredded chicken, hot sauce, salt, pepper, garlic powder, paprika and green onions to a bowl. Mix until well combined.
- Layout the tortillas and add shredded cheese to half of both the tortillas, then top with the chicken mixture. Divide the cheese and chicken filling evenly between both quesadillas.
- Top the chicken mixture with some additional shredded cheese and then fold the quesadilla creating a moon shape.
- Carefully add the assembled buffalo chicken quesadillas to a large skillet and cook on medium heat.
- Cook until the tortillas are golden on both sides and the filling has warmed, and the cheese has melted.
- Remove the quesadillas from the skillet and slice into 2-3 pieces and serve with Ranch or sour cream.
