BREAKFAST QUESADILLA
This easy breakfast quesadilla recipe is such a delicious cheesy breakfast idea! Crispy tortilla filled with light eggs, cheese and your favorite breakfast meat, so hearty and simple. Breakfast quesadillas are great for busy mornings, weekend brunch or even for meal prepping. Customize them to have everyone’s favorite fillings for everyone to love!
WHAT YOU NEED-
- Tortilla– For the best results, you want to use medium burrito flour tortillas. You can also use low-carb tortillas, gluten free, veggie tortillas, or any other lighter tortilla options.
- Scramble Eggs– This recipe calls for scrambled eggs, eggs whisked with whole milk. You can also use just eggs without milk, or only egg whites.
- Flavor– To season the eggs, I just use salt and pepper. You can also add any other of your favorite seasonings, like garlic powder, garlic salt, paprika, everything bagel seasoning, etc.
- Meat– Use your go to breakfast meat for these quesadillas, I love using bacon! You can use cooked bacon, ground breakfast sausage, chorizo, ham, turkey, or even turkey bacon.
- Cheese– You can use your go-to shredded cheese for this breakfast quesadilla recipe. Shredded cheese like mozzarella cheese, cheddar cheese, taco blend, mozzarella cheese, etc.
HOW TO MAKE BREAKFAST QUESADILLAS
Have these delicious and hearty breakfast quesadillas ready in no time!
- In a skillet, cook chopped bacon until cooked through and crispy. Remove from the oven and place on a paper towel to drain. Remove the bacon grease from the skillet but leave some to cook the eggs. (You can cook the breakfast meat ahead of time, 2-3 days.)
- In a bowl, whisk together eggs, milk, and seasonings until well combined.
- Pour the scrambled eggs mixture into the skillet with some bacon grease. Cook over medium heat, mixing as it cooks, cooking until desired doneness. (If you prefer not to use bacon grease, drizzle some oil or butter in the skillet.)
- Lay out the tortilla and add shredded cheese, scrambled eggs, and cooked breakfast meat to half of the tortillas. Divide the mixture evenly between both tortillas.
- Fold the empty side of the tortilla over the full side, creating a moon shaped quesadilla. Repeat with both quesadillas.
- Carefully add the quesadillas to a clean skillet and cook on medium low heat, until both sides of the tortilla are golden crispy and the cheese has melted.
- Remove and slice into 2-3 pieces and serve with desired sides.

Breakfast Quesadilla Recipe
Ingredients
- 2 medium flour tortillas
- 8 oz bacon chopped
- 2 large eggs
- 2 Tbsp whole milk
- ⅛ tsp salt
- ⅛ tsp ground black pepper
- 1 cup shredded cheese
Instructions
- In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
- Add chopped bacon to a skillet and cook on medium heat for about 6-8 minutes, until crispy and golden. (You can cook the bacon ahead of time and store it in the fridge until ready to assemble quesadillas.)
- Remove all the bacon grease from the skillet, except for about 2 teaspoons. Heat the skillet on medium high heat.
- Pour the scrambled egg mixture into the hot skillet and cook for about 2-3 minutes, mixing and scrambling as it cooks.
- Once the eggs are done, add the breakfast meat to the eggs and mix to combine.
- Lay out the tortillas and add cheese and the egg mixture on one half of the tortillas, dividing evenly between both tortillas.
- Fold the empty side of the tortilla over the full side, creating a half moon shape.
- Carefully add the quesadillas to a clean skillet and cook on medium low heat. Cook until both sides of the tortillas are golden and crisp and the cheese has melted.
- Remove the tortillas from the skillet and slice into 2-3 pieces.
- Serve immediately with desired sides.
