CHIPOTLE PICO DE GALLO

Love the popular fresh tomato salsa from Chipotle? Try this easy Pico de Gallo recipe that is loaded with juicy ripe tomatoes, onion, jalapenos, and cilantro. This simple Mexican salsa is the perfect dip or topping for your Chipotle bowls, tacos, or burritos. Packed with flavor and so easy to make, this is going to become your favorite tomato salsa!

WHAT IS PICO DE GALLO?

Pico de Gallo, also known as salsa fresca or Mexican salsa is a fresh and chunky salsa made with the main ingredients being tomatoes, jalapenos, and cilantro!

WHAT YOU NEED-

  • Tomatoes– Be sure to use ripe tomatoes. You can use either heirloom tomatoes, Roma tomatoes, Campari tomatoes or even cherry tomatoes for this salsa.
  • Onion– For the best results you want to use finely chopped red onion! You can also use yellow or sweet onions.
  • Jalapeno– This recipe calls for fresh jalapenos, but you can also use Sorana peppers or canned jalapenos. You can add more or less jalapeños, based on the spice level you want this Pico de Gallo to be.
  • Cilantro– The cilantro in this dip is key, it adds so many fresh flavors. Be sure to use fresh finely chopped cilantro.
  • Lime– Use either freshly squeezed lime or lemon juice.
  • Garlic– For added flavors, you can’t forget the garlic! Use freshly minced garlic for the best results, or you can use garlic powder or jarred minced garlic.
  • Flavor– To season this salsa, this recipe calls for salt and pepper. You can also add any of your other go-to seasonings.

HOW TO MAKE PICO DE GALLO

This fresh salsa comes together in under 10 minutes!

  1. In a bowl, add all the ingredients for the pico de gallo.
  2. Mix until fully combined. Taste and adjust the salt to the desired taste.
  3. Chill for at least 1 hour before serving. (For the best results, chill overnight, allowing the flavors and juices to enhance.)
  4. Serve as a dip or topping.

Ingredients

  • 4 roma tomatoes diced
  • 1/4 cup red onion finely chopped
  • 1/3 cup fresh jalapeno finely chopped
  • 3 garlic cloves minced
  • ½ tsp salt or to taste
  • ½ tsp granulated sugar
  • 1/3 cup fresh cilantro finely chopped
  • 2 Tbsp lime juice

Instructions

  • In a mixing bowl, add the chopped tomatoes, onion, jalapeno, cilantro, lime juice, salt, pepper, and minced garlic.
  • Mix until fully combined. (Taste and adjust the lime juice and salt, to desired taste.)
  • Cover and let chill in the fridge for 1 hour or overnight.
  • Serve as a dip or as a topping.
