Try this delicious chicken fajita quesadilla recipe that is loaded with flavors! Crispy tortillas loaded with juicy chicken, mushrooms, peppers, and more.
In a small ramekin, combine salt, pepper, and taco seasoning.
In a large skillet, heat 2 tsp of oil on medium high heat. Once hot, add the cubed chicken and half of the seasoning to the skillet and cook for about 3-4 minutes, until the chicken is fully cooked.
Once the chicken is cooked, remove the chicken from the skillet. In the same skillet, add the sliced mushrooms and cubed bell peppers and sauté for 3-4 minutes, or until the veggies are tender.
Add the chicken, chopped jalapenos, diced tomatoes, and the rest of the seasonings to the skillet. Sauté for an additional 1-2 minutes. Remove from the heat.
Layout both tortillas and spread alight layer of mayo over both tortillas.
Add shredded cheese and then chicken fajita filling onto half of the tortilla, divide evenly between both quesadillas.
Fold the tortillas, creating a moon shape. Carefully add the quesadillas to a large skillet.
Cook the quesadillas on medium low heat until both sides of the tortillas are golden and crispy and the cheese has melted.
Remove from the skillet and slice the quesadillas into 2-3 pieces.
