BBQ CHICKEN QUESADILLA
These easy BBQ chicken quesadillas are not only delicious but so quick to make! Quesadillas loaded with shredded barbecue chicken, onions, cilantro and melty cheese. Make these as an appetizer, lunch, snack, or even a light dinner. The perfect comfort food flavors all in one quesadilla.
WHAT YOU NEED-
- Tortillas– For the best results, use medium flour tortillas. You can also use any other tortilla, like low carb tortilla, gluten free tortillas, etc.
- Shredded Chicken– This recipe calls for shredded chicken, you can use homemade shredded chicken or rotisserie chicken! You can also use cubed or sliced sauteed chicken instead of shredded.
- Barbecue Sauce– Use your favorite barbecue sauce for this recipe. Sweet Baby Ray’s barbecue sauce, Stubb’s barbecue sauce, or Kinder BBQ sauce are all great brands. If you want a little kick, use a spicy barbecue sauce.
- Red Onion– Adding the red onion to the filling is totally optional, but it adds a kick of additional flavor. You can use either sliced or finely chopped red onion.
- Cilantro– The added fresh cilantro adds so much additional flavor to the filling, but it is totally optional! You can also swap the cilantro for finely chopped green onions, chives, or parsley.
- Cheese– Use your favorite shredded cheese like Mexican cheese, mild cheddar, taco blend, mozzarella cheese, etc.
HOW TO MAKE BBQ CHICKEN QUESADILLA
This recipe has all the right BBQ chicken flavors in quesadilla style!
- In a bowl, mix shredded chicken, seasonings, and barbecue sauce. (If you are using made ahead shredded chicken, warm the chicken before assembling quesadillas.)
- Layout the tortillas. With a pastry brush, brush some additional barbecue sauce onto the tortillas.
- Add the shredded cheese, barbecue chicken and additional toppings on one side of both tortillas, evenly distribute the mixture.
- Take the empty side of the tortilla and fold over.
- Add the assembled quesadillas to a large skillet and cook on medium low heat. (You want to make sure you cook on medium low heat to ensure the filling warms and the cheese melts as the tortillas crisp.)
- Cook until both sides of the tortillas are golden brown and the filling is warmed, and the cheese has melted.
- Remove from the skillet and slice into 2-3 slices.
- Serve with desired sides and enjoy.

EXTRA FILLING IDEAS-
Although these BBQ chicken quesadillas are delicious plain, you can totally add more ingredients to the filling for a heartier quesadilla.

QUESTIONS YOU MIGHT HAVE:
No! You can totally use cubed or sliced chicken instead.
This usually happens when you cook the quesadillas on high heat. You MUST cook the quesadillas on a medium low heat to allow the filling to warm and the cheese to melt as the shell browns.
No! You can totally swap shredded beef or shredded pork for a hearty barbecue quesadilla.
Once the quesadillas are cooled, store them in the fridge for 3-4 days. Then reheat when ready to enjoy. These are great for meal preparation and a fun lunch idea for adults and kids.
These come together quickly so the only thing you could prep ahead of time is to shred the chicken.

BBQ Chicken Quesadilla
Ingredients
- 2 medium flour tortillas
- 1 1/2 cup shredded chicken or cubed
- 1/2 cup barbecue sauce
- ¼ tsp salt
- ¼ tsp ground black pepper
- ¼ tsp garlic powder
- ¼ tsp paprika
- 1 Tbsp fresh cilantro finely chopped
- 2 Tbsp finely chopped red onion
- 1 cup shredded cheese
Instructions
- Add shredded chicken, barbecue sauce, salt, pepper, garlic powder, paprika, and cilantro to a bowl and mix until combined. (If using pre-cooked or cold shredded chicken, warm it up before mixing to ensure even heating when cooking the quesadillas.)
- Lay out the tortillas and lightly brush one side of each tortilla with barbecue sauce using a pastry brush.
- On one half of each tortilla, add shredded cheese, the chicken mixture, and any additional desired toppings.
- Fold the empty side of each tortilla over the filling to form a half-moon shape.
- Add the quesadillas to a large skillet and cook on medium low heat. (Avoid high heat, as it can cause the tortillas to brown too quickly before the filling is heated through.)
- Cook for about 3-4 minutes per side, until both sides are golden brown and the filling is warm, and the cheese has melted.
- Remove the quesadillas from the skillet and slice into 2-3 pieces.
- Serve immediately with desired sauces and sides.
