Whether you’re in a rush or looking to enjoy a relaxing morning, these breakfast tacos are quick, customizable, and guaranteed to satisfy. Get ready to start your day with this easy, delicious and hearty breakfast!

WHAT YOU NEED-

  • Tortillas– You can use your preferred tortillas! Either flour tortillas, corn tortillas, or even carb balance tortillas. You can also even use hard shell tortillas for a kick!
  • Eggs– The scrambled eggs mixture calls for eggs, whole milk, salt, and pepper. You can totally make it healthier and use only egg whites. You can also swap out the milk for cottage cheese or leave it out completely.
  • Meat– You can use your choice of breakfast meat for these tacos. Breakfast sausage, bacon, turkey bacon, chorizo, classic taco meat, or even steak can be used! The meat can also be swapped for beans as a vegetarian option.
  • Pico de Gallo– What is a taco without Pico de Gallo salsa! This Pico consists of fresh tomatoes, red onion, canned or fresh jalapeno, garlic, salt, and lime juice! You can also use store bought Pico or swap it out for store-bought salsa or homemade salsa.
  • Cheese– Shredded cheese of your choice can be used! You can also use feta cheese if you prefer.
  • Sauce– Don’t forget the sauce! Sauces like sour cream, Cholula hot sauce or even my taco sauce from the chicken tacos recipe goes so great with these breakfast tacos!

HOW TO MAKE HOMEMADE BREAKFAST TACOS

These tacos come together so quickly and can be enjoyed in no time! These are also great for meal prepping!

  1. Prepare all the taco toppings that you are going to use. Make the Pico de Gallo.
  2. Brown the breakfast sausage in a skillet, breaking apart the sausage as it cooks. (If you are using bacon, check out my how to cook bacon post!)
  3. Whisk together the ingredients for the scrambled eggs. Add the egg mixture to the skillet and sauté until cooked through and fluffy.
  4. Heat the tortillas and then assemble the tacos with the eggs, meat, and desired toppings.
  5. Serve immediately while still hot and enjoy.

MAKE AHEAD & MEAL PREPPING

These tacos are great to make ahead of time or for meal prepping! You want to cook the eggs and meat and prepare your toppings. Just be sure to store everything in separate containers to avoid the tacos from getting soggy. Then you can just heat up the tortillas, meat and eggs, assemble and enjoy! You can also add the eggs and meat to your tortillas and then wrap in foil or add to a container. When ready to enjoy, warm and then top with desired toppings and serve.

No, a breakfast taco is different from a breakfast burrito! A taco is usually small and contains less filling than a burrito.

Can I make this gluten free?

Yes! Use corn tortillas instead of flour tortillas for a gluten free option!

Can I make these tacos vegetarian?

Yes, swap out the breakfast meat for beans or just leave it with eggs, veggies, and toppings!

Can I make these ahead of time?

Yes, you can cook breakfast meat and eggs ahead of time. You can also make the Pico the night before also!

How do I store leftovers?

I recommend that you store all the ingredients for the tacos in separate containers to avoid the tacos from going soggy. Store in the fridge for up to 3 days!

Can I swap out the protein?

Yes! You can use breakfast sausage, bacon, turkey bacon, beans, chicken sausage, chipotle chicken or even classic taco meat.

Can I use whole eggs instead of scrambled eggs?

Yes, although I recommend the scrambled eggs, you can make these with whole fried eggs instead.

Ingredients

  • 10 tortilla corn of flour
  • 1 lb ground breakfast sausage
  • sour cream optional
  • pickled onions optional
  • shredded cheese optional
  • chopped cilantro optional

Scrambled Eggs-

Pico de Gallo-

Instructions

  • In a bowl, combine the chopped tomatoes, jalapenos, lime juice, red onion, garlic, cilantro, salt and pepper. Set aside.
  • Prepare any other desired taco toppings.
  • Heat a skillet on medium high heat. Once hot add the breakfast sausage and brown. Cook for about 3-4 minutes, breaking apart as the sausage cooks.
  • Remove the sausage from the skillet, transfer to a bowl and cover to keep warm.
  • Whisk together the eggs, milk, salt and pepper.
  • In the same skillet, with the sausage grease, pour in the egg mixture. Cook on medium heat for 2-3 minutes, mixing as the eggs cook.
  • Heat the tortillas and then assemble the tacos with the eggs, meat, and desired toppings.
  • Serve immediately while still hot and enjoy.
