SAUSAGE MCGRIDDLE
This homemade Sausage McGriddle recipe takes the classic fast-food breakfast to a whole new level. The combination of fluffy pancakes, juicy sausage patty, eggs and cheese is truly heavenly! This McGriddle comes together in no time and is a great make ahead breakfast. Skip the long drive-thru lines and make the popular McGriddle at home
WHAT YOU NEED-
- Pancakes– You can use your go-to pancakes, store-bought pancake mix or homemade pancakes will work.
- Sausage– Use either pork or chicken sausage patties. I recommend that you try homemade breakfast sausage patties for this breakfast sandwich recipe.
- Egg Mixture– The scrambled egg mixture calls for eggs, milk, salt and pepper. You can also swap out scrambled eggs for regular fried eggs!
- Cheese– For the best results, use sliced American cheese. You can also use any other of your favorite sliced cheese.
- Bacon– You can’t have a delicious breakfast sandwich without bacon! You can use either regular pork bacon, turkey bacon, or just leave it out. Check out my post on how to make the perfect batch of bacon.
HOW TO MAKE HOMEMADE MCGRIDDLES
Have this sausage egg and cheese McGriddle ready with just a few steps!
- Meat– Cook the sausage patties in a skillet on medium high heat until cooked through. Cook the bacon with the desired cooking method.
- Scrambled Eggs– In a bowl, whisk together the ingredients for the scrambled eggs. Pour half of the egg mixture into the skillet and cook on medium heat, and cover with a lid.
- Divide the egg in half and then fold each section into a square. Remove from the skillet and top with cheese. Repeat to have four egg squares.
- Pancakes– Prepare the pancake batter. Cook eight even sized pancakes. (If you want perfect shaped pancakes, use a pancake mold or the ring lid for mason jars.)
- Assemble Mcgriddles– Layout four of the pancakes. Add sausage links, egg and cheese, and bacon onto each pancake. Top with another pancake.
- Serve immediately, while it is still warm and serve with maple syrup.
MCGRIDDLE VARIATIONS
You can totally switch up this sandwich with different options!
- Sausage– You can leave out the egg and cheese and just add a sausage patty in between your pancakes. You can also double up on the patty.
- Bacon– Make it a bacon egg and cheese McGriddle and leave out the sausage! You can also use turkey bacon instead of pork bacon.
- Ham– Swap out the sausage for ham or turkey for a light sandwich.
- Egg & Cheese– Leave out all the meat and just use egg and cheese as the filling.
- Steak– For a heartier McGriddle, use steak for your choice of meat!

MAKING AHEAD-
These are great to make ahead of time! Whether you want to prepare the night before or freeze for later, you can totally do that. There are several options to make these sandwiches ahead of time:
- Option 1– Make this recipe ahead of time, by cooking everything beforehand and store it in the fridge until ready to assemble and serve. You can make everything ahead of time up to 2 days ahead of time up to 2 days ahead of time.
- To Enjoy– When ready to enjoy, just heat everything up, assemble and serve!
- Option 2– You can cook your pancakes and bacon up to 2-3 days ahead of time.
- To Enjoy– When ready to enjoy, just cook the sausage and eggs and assemble.
- Option 3– Assemble your Mcgriddles and wrap them individually in plastic wrap or parchment paper and add to a Ziploc bag or container for 3-4 days.
- To Enjoy– Unwrap your sandwich, heat in the microwave, toaster oven, air fryer, or oven and serve.
FREEZING SAUSAGE MCGRIDDLES
These breakfast sandwiches also freeze GREAT!
- Cook all the ingredients and cool.
- Once cooled, assemble the sandwiches and then wrap individually in plastic wrap or parchment paper.
- Add them to a freezer safe bag or container and freeze for up to 3 months.
- To Enjoy– You can thaw the sandwiches overnight and reheat in the microwave or toaster oven. Or you can thaw in the morning in the microwave.
QUESTIONS YOU MIGHT HAVE:
This recipe makes 4 McGriddle sandwiches. You can make more or less depending on preference.
I like to cook the bacon and sausage first and cover to keep warm as I make the eggs and pancakes. You can also keep the oven or toaster oven warm and keep the cooked ingredients in there as you cook the rest.
I LOVE the added sweetness from drizzling maple syrup over the Mcgriddles. The maple syrup can be used based on preference.
Reheat in the microwave, toaster oven or air fryer until warm. Be sure not to overheat your pancakes or they will become hard.

Sausage McGriddle Recipe
Ingredients
- 4 breakfast sausage patties
Egg Mixture-
- 4 eggs
- 1/3 cup whole milk
- ½ tsp salt
- ¼ tsp ground black pepper
Pancakes- **
- 1 3/4 cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- Pinch salt
- 3 Tbsp granulated sugar
- 1 large egg
- 1 tsp vanilla
- 1 cup whole milk
- 4 Tbsp melted & cooled unsalted butter
- 2 Tbsp butter for greasing
Optional-
- 4 slices American cheese
- 4 pieces cooked bacon optional
- maple syrup for drizzle
Instructions
Sausage Patties-
- Heat a skillet over medium-high heat.
- Once hot, add the sausage patties to the skillet and cook, flipping halfway, for about 3-4 minutes per side, or until the patties are fully cooked through.
- Cook the bacon to your desired level of crispiness using your preferred method (skillet, oven, or air fryer). Set aside.
- Cut the bacon slices in half, giving you 8 slices of bacon.
Scrambled Eggs-
- In a mixing bowl, whisk together eggs, milk, salt, ground black pepper.
- Heat a skillet over medium low heat and lightly grease butter or oil. (You can use the skillet that you cooked the sausage in and use the leftover grease.)
- Pour half of the egg mixture into the skillet and spread it out evenly.
- Cover the skillet with a lid and cook for 3-4 minutes, or until the egg starts to solidify.
- Once the eggs are cooked, use a spatula to divide the egg into two halves. Fold each half towards the center to create two even squares.
- Remove the egg squares from the skillet and top each with a slice of cheese. Set aside.
- Repeat the same process with the remaining egg mixture to create a second batch of two egg squares.
Pancakes-
- Sift the flour, baking soda, baking powder, sugar, and salt in a large mixing bowl.
- In a separate bowl, whisk together the egg, milk, vanilla and cooled melted butter.
- Pour the wet batter into the dry ingredients and whisk just enough to combine. (Do not overmix, it’s okay if there are lumps.)
- Heat a griddle or large skillet over medium heat and lightly grease with butter.
- Using a 1/3 cup measuring cup, pour the batter into 4 even sized pancakes. (You can use pancake mold or mason jar rings to ensure uniform shape if desired.)
- Cook the pancakes on medium heat for 2-3 minutes, or until the pancake begins to bubble and create holes. Flip and cook for another 2-3 minutes.
- Remove the pancakes from the skillet. Repeat to make another batch of 4 pancakes.
Assemble McGriddles-
- Take four of the pancakes and place them on a flat surface or plate.
- On top of each pancake, layer a sausage patty, one of the cheesy egg squares, and two half pieces of bacon.
- Top each sandwich with another pancake to complete the McGriddle stack.
- Serve immediately while the sandwiches are warm. Optionally, drizzle with maple syrup for an added sweet touch.
