A simple, fresh copycat Chipotle corn salsa recipe that is made in minutes! Fresh corn combined with red onion, jalapenos, cilantro and freshly squeezed lime juice, the ultimate salsa.

This is not the only Chipotle recipe I have recreated! Try my copycat version of Chipotle chicken, Chipotle steak or the fresh pico de gallo.

COPYCAT CHIPOTLE CORN SALSA

This fresh corn salsa is the ultimate dip, no matter the occasion! The corn salsa is loaded with all the right flavors, giving you a delicious fresh dip that is great as a dip, topping or side dish. If you love Chipotle corn salsa, then you need to give this copycat recipe a try!

WHAT YOU NEED-

  • Corn– Chipotle used white corn for their salsa, but you can use either white or yellow sweet corn for this salsa. For the best results you want to use canned or fresh corn. Frozen corn can also be used, just make sure you thaw it first. If you are using fresh corn, be sure to cook and cool first.
  • Jalapeños – Either fresh or canned jalapeños work well. This recipe calls for canned jalapeños, but canned green chiles are a great alternative too. You can also use poblano peppers.
  • Onion– Red onion is ideal for this salsa, but sweet onion is a good substitute if you prefer a milder flavor. If you don’t like onion, you can leave out the onion fully.
  • Garlic– Use freshly minced garlic for the best results.
  • Cilantro– The freshly chopped cilantro is the cherry on top to this fresh salsa; you don’t want to leave it out!
  • Lime Juice– Either fresh lime or lemon juice can be used for this dip.
  • Flavors– Season simply with salt and pepper or add extra spices to taste.

HOW TO MAKE CHIPOTLE CORN SALSA

You can have this fresh corn salsa recipe ready in under 10 minutes!

  1. Add all the ingredients into a bowl and toss until well combined. (Taste and adjust the seasoning to desired taste.)
  2. Serve immediately or chill in the fridge until ready to use. (For the best results, you want to chill the salsa in the fridge for a couple hours, to allow the juices to sit and enhance in flavor.)

Switch up this classic corn salsa and make different variations for different flavors!

  • Tomato– Add chopped tomatoes to this dip to get a mix of corn salsa and Pico de Gallo!
  • Fruit– Make this sweet and spicy dip and add chopped mangos or peaches to this salsa, it’s so GOOD!
  • Bean– If you love beans, make this a black bean corn salsa by adding your favorite black beans.

Can I just use sweet yellow corn instead of white corn?

Yes, you can use either yellow or white corn. You can also even mix both.

Is this corn salsa spicy?

The jalapenos give this salsa a little kick, but you can add more or less jalapenos to adjust to your desired spice level.

Do I have to add cilantro?

Although the cilantro adds so many flavors, you can leave it out if you don’t like the taste of cilantro.

Do I have to chill this corn salsa before serving?

For the best results, you want to chill this salsa for at least a couple hours before serving.

Ingredients

  • 30.50 oz white corn 2 cans
  • 1/4 cup canned jalapenos finely chopped
  • 1/2 small red onion finely chopped
  • 1/4 cup finely chopped fresh cilantro
  • 2 garlic cloves minced
  • 2 tbsp lemon juice
  • ½ tsp salt or to taste
  • ¼ tsp ground black pepper or to taste

Instructions

  • In a bowl, add corn chopped jalapeno, chopped red onion, chopped cilantro, minced garlic, lemon juice, salt, and pepper.
  • Toss all the ingredients until well combined.
  • Allow to chill for at least 1-2 hours for best results. Serve as desired.
