GRILLED CHICKEN SANDWICH
Looking for a simple and satisfying recipe that makes for the perfect lunch or dinner during the summertime? Make this grilled chicken sandwich recipe! Perfectly marinated chicken breast that is grilled and added to toasted buns with fresh toppings. This chicken sandwich recipe is great for barbecues, weeknight meals or even for meal prep!
MARINADE FOR GRILLED CHICKEN-
One of the key components to perfectly grilled chicken that is juicy and not dry is the marinade! Here is one of my go-to marinades for grilled chicken!.
- Chicken– When making grilled chicken sandwiches, you want to use boneless skinless chicken breast. If you prefer chicken thighs, boneless skinless chicken thighs will also work.
- Mayo – The mayo in the marinade makes the chicken incredibly tender. You can use regular, light, or avocado mayo.
- Oil – Canola, vegetable, or olive oil can be used. Our go-to is olive oil. The combination of oil and mayo is truly the best for achieving juicy, tender chicken.
- Flavor – For seasoning, we use salt, pepper, and your favorite chicken seasoning. We like to use Kick’n Chicken or Montreal Chicken seasoning.
HOW TO MAKE GRILLED CHICKEN SANDWICHES
These juicy chicken sandwiches come together so quickly. You’re going to love this sandwich, no matter what the occasion.
- Cut the chicken breasts in half at an angle to create two even-sized patties.
- Using a meat mallet, pound the chicken until all patties are even in thickness. (Do not overbeat the thinner areas of the chicken, you only want to beat the areas that are thicker than the other areas.)
- In a large mixing bowl, combine all the ingredients for the grilled chicken marinade. Add the chicken to the marinade and mix to fully cover the chicken patties. Cover and allow to marinate at room temp for at least 30 minutes or in the fridge for up to 2 days.
- Preheat the grill and clean the grates. Once hot, add the marinated chicken and grill until cooked through.
- Meanwhile, prepare all the toppings for your sandwiches.
- Once the chicken is cooked and crispy on both sides, top with cheese and assemble the sandwiches.
- Serve immediately with your desired sides.

AIR FRYER METHOD-
Not in the mood to get out the grill? No problem! Just air fry the chicken for almost the same results.
- Place the marinated chicken breasts in the air fryer basket.
- Air fry at 400°F for about 10-12 minutes or until the chicken is fully cooked, flipping halfway through the cooking time.
- Once the chicken is cooked, top with sliced cheese if desired.
- Assemble the sandwiches and enjoy!
STOVE TOP METHOD-
For a quick and easy grilled chicken sandwich, just cook the chicken on the stovetop, using a cast iron, or a grill pan!
- Heat the cast iron ion medium high heat.
- Once hot add the chicken breast to the skillet and reduce heat to medium. Cook for about 5-6 minutes per side, flipping halfway.
- When the chicken is cooked through, top with cheese and remove from heat.
- Assemble your sandwiches and serve.

Elevate your grilled chicken sandwich with some different flavors! Here are some delicious sandwich variations:
- Mushroom & Onion– Sauté some mushrooms and onions to add over the grilled chicken for a delicious and hearty sandwich.
- Avocado Bacon– Add crispy bacon and sliced or mashed avocado to your grilled chicken sandwich.
- Spicy Chicken Sandwich– Once the chicken is grilled, coat the chicken in my homemade buffalo wing sauce for a spicy grilled chicken sandwich. LINK
- Honey Mustard & Swiss– Use Swiss cheese and my homemade honey mustard sauce for a delicious twist.
QUESTIONS YOU MIGHT HAVE:
I recommend cutting the chicken so that it fits perfectly on the burger buns. If you prefer just using the entire chicken breast on one sandwich, it will make only 2 sandwiches, and the cooking time will be longer.
For the best results, you want to marinate this chicken overnight! This will give you soft and juicy chicken. If you are making this chicken right away, marinate at room temp for at least 30 minutes. The chicken can marinate in the fridge for up to 2 days!
The internal temperature of cooked chicken will be 165°F. I highly recommend investing in a food thermometer!
If you have leftover grilled chicken, once cooled, store in a container in the fridge for 2-3 days. To enjoy, reheat and assemble sandwiches.
Yes! You can add hot sauce of chili powder to the chicken marinade for a spicy grilled chicken sandwich.

Ingredients
- 2 chicken breasts boneless & skinless
chicken marinade-
- 1/3 cup mayo
- 3 Tbsp oil
- ½ tsp salt
- ¼ tsp ground black pepper
- 2 tsp chicken seasoning

- 4 burger buns
- 4 slices of cheese
- Red onion slices
- Tomato slices
- Pickles

Instructions
- Rinse and cut off all excess fat from the chicken breast. Cut the chicken breast in half at an angle to give you 2 patties.
- With a meat mallet, beat the chicken to make all the chicken patties even in thickness.

- Combine the chicken breast and marinade in a plastic bag or bowl. Allow to marinate for 30 minutes or up to 2 days.
- Preheat the grill and clean the grill grates. Once hot add the marinated chicken and grill for about 5-6 minutes per side.
- Meanwhile, prep all the toppings for your sandwich.
- Once the chicken breast reaches an internal temperature of 165°F remove it from heat. Top with cheese and assemble the sandwiches.
