BANG BANG CHICKEN SKEWERS
These homemade grilled Bang Bang Chicken skewers will bring all the heat and flavor this grilling season! Juicy chicken marinated and smothered in a sweet and spicy Bang Bang sauce, these skewers are going to become a favorite. Whether you are looking for a weeknight dinner or you’re hosting, these smokey chicken skewers are the answer.
WHAT YOU NEED-
- Chicken– This recipe calls for boneless skinless chicken breast, but you can also use boneless chicken thighs.
- Olive Oil– Tossing the chicken in the oil helps you get soft and tender chicken kabobs. You can use either olive oil, canola oil, vegetable oil or even avocado oil.
- Flavors– To season the skewers, this recipe calls for salt, pepper, garlic, and paprika. You can use any of your go-to seasonings for this chicken recipe.
- Bang Bang Sauce– The main marinade and sauce for these chicken skewers is the homemade bang bang sauce! This sauce gives the chicken a bold, sweet, and spicy sauce.
HOW TO MAKE GRILLED BANG BANG CHICKEN SKEWERS
You are going to love these smokey chicken skewers smothered in a homemade flavorful sauce.
- In a small bowl, mix the ingredients for the homemade bang bang sauce.
- Cut the chicken into 1½ to 2-inch cubes and place them in a large bowl. Mix with the oil and seasonings.
- Pour in half of the bang bang sauce and mix until the chicken is thoroughly coated.
- Cover and marinate in the refrigerator for up to 12 hours. If cooking right away, let the chicken sit at room temperature for at least 30 minutes to absorb the flavors.
- Preheat the grill to medium-high and clean the grates.
- Thread 6–8 pieces of chicken onto each skewer, being careful not to overcrowd them. Repeat until all the chicken is used.
- Place the skewers on the preheated grill. Cook over medium heat for about 5–6 minutes per side, turning often, until the chicken is fully cooked. As the chicken cooks, brush on the remaining bang bang sauce to build flavor and allow it to caramelize.
- Once cooked through, remove the skewers from the grill and give them a final brush with the sauce. Top with freshly chopped greens and serve with your favorite sides.
Craving these but don’t have a grill? No problem! Just make these skewers in the air fryer or oven instead! You won’t get the smokey charred taste, but they are still just as good!
AIR FRYER METHOD-
When using the air fryer method, be sure your skewers will fit into your air fryer! For my air fryer, I use smaller wooden skewers instead of the classic ones.
- Lightly spray the air fryer basket with cooking spray, then arrange the skewers in a single layer—do not overcrowd. You may need to work in batches.
- Air fry at 400°F for 6 minutes. Brush with sauce, flip, then cook for another 5–6 minutes, or until the chicken is fully cooked.
- Remove from the air fryer, brush with more sauce, and top with chopped greens. Serve warm with your favorite sides.
OVEN BAKED METHOD-
If you are using the baking method, you will still want to add the chicken onto skewers!
- Preheat the oven to 400°F and line a baking sheet with foil. Choose a sheet that allows the skewers to rest across the edges so they’re slightly elevated.
- Place the skewers on the sheet and bake for 22–25 minutes, flipping and brushing with sauce halfway through.
- For a crispy finish, brush with more sauce a few minutes before the end and broil for 3–4 minutes—keep an eye on them to prevent burning!
- Transfer to a serving plate, garnish with chopped greens, and enjoy with your favorite sides.

QUESTIONS YOU MIGHT HAVE:
You want to marinate the chicken for at least 30 minutes before cooking. But for the best results marinate for up to 12-24 hours.
Cooked chicken will have an internal temperature of 165°F. I highly recommend investing in a good quality food thermometer if you cook and grill a lot.
You can use whatever you prefer! If you grill often, invest in a good pair of metal skewers. I like to have mess-free options using wooden skewers that I can pitch after!
The key to avoiding the wooden skewers from burning when grilling is to soak them! Soak them in cold water for about 15-30 minutes before. I like to throw them in the cold water first thing and let them soak as I prepare the chicken.

Once the chicken skewers are cooled, transfer them to an airtight container or bag and store them in the fridge. The chicken can be enjoyed for 3-4 days. (You can leave the chicken on the skewers or remove them from the skewer, whatever you prefer.)

Grilled Bang Bang Chicken Skewers
Ingredients
- 1 1/2 lbs chicken breast cubed
- 1 Tbsp olive oil
- 1 tsp salt
- ½ tsp ground black pepper
- ½ tsp garlic powder
- ¼ tsp paprika
Bang Bang Sauce-
- 1/2 cup mayonnaise
- 1/3 cup Thai sweet chili sauce
- 2 Tbsp sriracha hot sauce
Instructions
- In a small bowl, whisk together the mayo, sweet chili sauce, and sriracha until well combined. Set aside.
- Cube the chicken into 1½-2-inch cubes and add to a large bowl. Add the oil, salt, pepper, garlic powder, and paprika to the chicken and toss until well combined.
- Pour half of the yum yum sauce mixture into the chicken and toss. Cover the chicken and marinade in the fridge for up to 12 hours. (If you are grilling right away, allow the chicken to marinate at room temp for at least 30 minutes.)
Grilling Method-
- Preheat the grill to medium-high heat and clean the grates.
- Working one skewer at a time, slide the marinated chicken cubes onto the skewers, threading about 6-8 chicken cubes onto each skewer. (Do not overstuff the chicken on the skewers, and don’t push them so close together, leave some space between each piece. This ensures even cooking.)
- Repeat until all the chicken is on skewers.
- Carefully add the chicken skewers onto the preheated grill. Grill on medium heat for about 5-6 minutes per side, or until the chicken is cooked through.
- As the skewers cook, rotate the chicken often. With the rest of the bang bang sauce, continue to brush the sauce over the chicken, and allow the chicken and sauce to caramelize.
- Once the chicken is cooked through, remove the skewers from the grill and brush them one final time with the sauce.
- Top with freshly chopped greens and serve with desired sides.
Air Fryer Method-
- Spray the air fryer basket with baking spray and add the skewers into the basket. Do not overcrowd the basket. (Depending on your air fryer size, you might have to do it in batches.)
- Air fryer the skewers at 400F for 6 minutes, then brush the chicken with some sauce, flip, and cook for another 5-6 minutes or until the chicken is cooked.
- Remove the skewers from the air fryer and brush with some more sauce, top with greens. Serve immediately with desired sides.
