TACO BELL CHICKEN QUESADILLA RECIPE
This copycat quesadilla recipe tastes just like the popular Taco Bell chicken quesadilla. The main ingredient in this recipe is my homemade Taco Bell quesadilla sauce that brings this recipe to a whole new level! Load up your tortillas with cheese, juicy seasoned chicken and my quesadilla sauce and cook until crispy and cheesy, so effortless yet delicious.
WHAT YOU NEED-
- Tortilla– For the best results use flour tortillas in burrito, taco, or fajita size. You can also swap the flour tortillas for corn tortillas, carb balance, protein tortillas, or any other type you like.
- Chicken– This recipe uses boneless, skinless chicken breast, but you can also use chicken thighs, chicken tenders, or even leftover shredded chicken. You can also use my Chipotle chicken or blackened chicken for these quesadillas.
- Quesadilla Sauce– The secret to this recipe is in the sauce! You want to use my homemade Taco Bell quesadilla sauce that gives you almost identical flavors. Use my homemade version or your favorite store-bought sauce, this gives you juicy and flavorful quesadillas.
- Cheese– You want to your go-to shredded cheese, like the Mexican or taco blend cheese.
- Flavors– To season the chicken, I just use my go-to seasonings, salt, pepper, garlic powder, and paprika. You can use any of your favorite seasonings, like taco seasoning, blackening seasoning or any other seasoning blends.
HOW TO MAKE CHICKEN QUESADILLAS
You can have these delicious homemade chicken quesadillas ready in under 10 minutes! Skip the long drive-thru lines and have these easy chicken quesadillas ready in no time.
- Heat a skillet with a drizzle of oil on medium high heat.
- Add finely cubed chicken and sauté. Season with the seasoning blend and sauté until the chicken is fully cooked through. Remove from the heat.
- Layout a tortilla and spread the quesadilla sauce evenly over the entire tortilla. Add shredded cheese and then chicken over half of the tortilla, divide the chicken and cheese over both tortillas.
- Fold the empty side of the tortilla over the filling side and press down to secure.
- Add the assembled quesadillas in a skillet over medium heat. Cook until the bottom is crispy and golden brown.
- Flip and cook until the other side is golden and the cheese is melted. (For the best results, you want to cook on medium low heat, so the cheese and filling takes time to warm through, without burning the tortilla.)
- Remove the quesadillas from the skillet and slice into 2-3 pieces.
- Serve immediately with desired sauces and sides.
QUESADILLA VARIATIONS
Level up your chicken quesadilla by adding more into the filling!
- Fajita Quesadilla– Make these with a hearty chicken and veggies filling, fajita style. Make Chicken Fajita Quesadillas for a heartier version.
- Chicken Mushroom– If you love mushrooms, add sauteed mushrooms to the filling. You can also do a sauteed mushroom and onion mixture and use Swiss cheese.
- Spicy Buffalo Chicken– Instead of using quesadilla sauce, mix the chicken in hot sauce for buffalo chicken quesadillas.
- Hawaiian BBQ- Make Hawaiian style quesadillas! Load the filling with chicken, red onions, and pineapples and swap out the quesadilla sauce for barbecue sauce, so GOOD!
- Pesto Style– Swap out the sauce for basil pesto sauce. Add sun-dried tomatoes and use mozzarella cheese for an Italian style quesadilla. LINK
SIDES TO PAIR WITH YOUR QUESADILLAS-
The key to the best quesadilla is the way you serve them! Here are some sides I love serving these Taco Bell chicken quesadillas with:
- Sour Cream
- Taco Bell Sauce
- Hot Sauce
- Guacamole

QUESTIONS YOU MIGHT HAVE-
No! You can totally switch out the chicken and use shrimp, steak, shredded pork or even plain cheese!
The quesadilla sauce has a slight kick because of the jalapenos but because nothing else is spicy, it’s not spicy. The overall spice level would be around mild.
These air fry perfectly! Add the quesadillas to the air fryer basket and air fry at 350F for about 8-10 minutes or until crispy and cheese has melted.
Yes, you can use precooked chicken like canned chicken or rotisserie chicken! Just combine the shredded chicken with seasonings and then assemble the quesadilla.
Yes, make these ahead of time, they reheat great! Just reheat in the microwave or air fryer.
Store the leftovers in an airtight container in the fridge for up to 3-4 days!
