CHIPOTLE BOWL RECIPE
This simple Chipotle bowl copycat recipe is such an effortless meal that everyone will love! Not only is this homemade version cheaper but it’s easy and meal prep friendly. The bowls are hearty and loaded with juicy chicken, cilantro lime rice and extras. We love how customizable this dish is, you can load it up!
WHAT YOU NEED-
- Protein– For the protein, you can use either chicken, steak, pork, or even shrimp! The classic way is to use juicy Chipotle chicken, use our copycat recipe to achieve the ultimate Chipotle bowl. For additional protein, you can add beans to your bowl such as pinto beans.
- Grains– Adding grains makes this bowl heartier! The classic way to enjoy this Chipotle bowl is with our Cilantro Lime Rice. You can also enjoy it with brown rice, or even quinoa.
- Toppings– The toppings that you add to this chicken bowl are totally up to you! From dips to veggies, have fun with the type of toppings you add.
- Sauces– Chipotle offers sour cream, tomatillo-green chili salsa, and tomatillo-red chili salsa, and queso. You can buy any of these sauces at your local grocery store or even make homemade versions!

HOW TO MAKE CHIPOTLE CHICKEN BOWLS
- Prepare the cilantro lime rice according to our copycat recipe.
- Cut and prep all the toppings for the bowls.
- Cook the protein using our easy recipe for juicy and flavorful Chipotle chicken.
- In a bowl, add the rice, chicken, toppings and sauces.
- Serve immediately while warm.

- Storing– You want to store the leftovers all separately or together just like you would store your Chipotle leftovers. Store in the fridge for 1-2 days.

Chipotle Chicken Bowl Recipe
Ingredients
Chipotle Chicken-
- 1 1/2 lbs chicken thighs boneless & skinless
- 3 Tbsp olive oil
- 1½ tsp salt
- ½ tsp ground black pepper
- 1½ tsp garlic powder
- ½ tsp paprika
- ¼ tsp chili powder
- ½ tsp ground cumin
- ½ tsp cayenne powder
- 1 Tbsp lime juice
Cilantro Lime Rice-
- 1 cup basmati rice
- 2 cups water
- 1 Tbsp butter
- 3 Tbsp lime juice
- ½ tsp salt
- ¼ tsp ground black pepper
- ½ tsp garlic powder
- 2 Tbsp chopped fresh cilantro
Toppings-
- 1 1/2 cup chopped romaine
- 1 cup pico de gallo
- 1 cup corn salsa
- 1/3 cup shredded cheese
- 1/4 cup sour cream
- 1/4 cup pickled onions optional
- hot sauce optional
Instructions
Chipotle Chicken-
- Rinse chicken thighs and remove any excess fat and pat dry and add to a bowl.
- Add salt, pepper, garlic, paprika, chili powder, cumin, cayenne, olive oil, and lime juice to the chicken. Mix until well combined.
- Add oil to a skillet and heat on medium high heat.
- Once the skillet is hot, add the marinated chicken thighs and cook for about 6-8, minutes.
- Flip and continue cooking for another 10-12 minutes, or until the chicken thighs are cooked through.
- Remove the chicken thighs from the skillet and let sit for about 5 minutes. Then cube the chicken thighs in small bite size pieces.
Cilantro Lime Rice-
- Meanwhile, bring water to a boil in a pot on medium high heat. Once boiling add the rinsed rice and reduce to medium low heat and cook with a closed lid for 12 minutes. Stirring occasionally.
- After 12 minutes, the water should be gone leaving you with fluffy rice.
- Remove from heat and add in the butter, lime juice, salt, pepper, garlic powder, and chopped cilantro.
- Mix until well combined.
Assemble Chipotle Bowls-
- Cut and prep all the toppings for the bowls.
- In a bowl, add the rice, chicken, toppings and sauces. Repeat to make a total of four chipotle chicken bowls. (You can also layout all the bowls, to serve these bowls buffet style!)
- Serve immediately while warm.
