BREAKFAST BOWL RECIPE
Delicious breakfast bowls loaded with crispy potatoes, veggies, breakfast sausage, and fluffy scrambled eggs along desired toppings. These customizable potato bowls are hearty and loaded with flavors! Whether you’re rushing out the door or have a little extra time to savor your morning, this recipe is perfect. These bowls are also great for meal prepping, the perfect breakfast on the go dish.
WHAT YOU NEED-
- Potatoes– Feel free to use your preferred type of potato for this recipe, such as Yukon Gold, russet, Idaho, red, or even baby potatoes! You can also use air fryer potatoes, frozen potatoes or shredded potatoes instead of cubed potatoes.
- Onion– For added flavor, I love to add cubed onions to the potatoes! You can use either red onion, cooking onion, or sweet onion. If you don’t like onions, you can leave the onion out.
- Peppers– Any color bell pepper will work for this recipe. The combination of flavors of potatoes, onions and peppers is so good!
- Eggs– You want to use either regular eggs or for a lighter option, you can use just egg whites, minus milk.
- Milk– For fluffy and creamy scrambled eggs, I whisk the eggs with whole milk! You can use regular milk, 2% milk, half and half creamer, or just leave the milk out for a healthier version.
- Flavors– To season the potatoes and scrambled eggs, I use salt, pepper, garlic powder, paprika, and Italian seasoning. You can swap in your favorite seasonings, I love the Gourmet Seasoning, Roast Vegetables & Fries Blend for extra flavor! LINK
- Sausage– These breakfast bowls call for breakfast sausage! You can use either sausage links, sausage patties, or ground breakfast sausage! Either pork or chicken sausage will work great! You can totally swap out the breakfast for different meat.
- Green Onion– Adding freshly chopped greens brings the dish to another level! Consider using parsley, cilantro, dill, or a mix of all three for a fresh touch.
- Cheese– Top the bowl with shredded mild cheddar, Colby jack, or mozzarella cheese. You can also use feta cheese or no cheese at all.
HOW TO MAKE BREAKFAST BOWLS
Have these potato breakfast bowls ready in no time, and meal prep for the whole week!
- Cook Breakfast Potatoes- Rinse the potatoes and cube into small even size pieces, no bigger than 1/2-inch cubes. Cube the bell pepper and onion into small cubes. In a small bowl, combine the seasonings.
- Heat a skillet on medium high heat with oil and butter. Add the onions and peppers and sauté for 2 minutes.
- Add in the potatoes and 1/2 of the seasoning mixture and cook the potatoes on medium high heat for about 15 minutes, or until tender. Close the skillet with a lid, allowing the steam to help cook the potatoes fast.
- Season the potatoes with the rest of the seasoning as the potatoes cook.
- Once the potatoes are cooked, remove from the heat and top with shredded cheese and chopped greens.
- Prepare Bowl Toppings– Meanwhile, cook the sausage links in another skillet until the links are cooked through. Remove from the skillet and chop the sausage into bite sized pieces. Cover to keep warm.
- Whisk together all the ingredients for the scrambled eggs. Scramble the egg mixture until fluffy and light.
- Prepare all the other desired bowl toppings.
- Assemble the Breakfast Bowls– In a bowl, add sauteed potatoes, scrambled eggs, sausage, shredded cheese.
- Top with additional desired toppings and enjoy while still hot.
OVEN ROASTED POTATOES-
Don’t want to trouble yourself over the stove top? Make the potatoes in the oven instead!
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Add the onions, peppers, and cubed potatoes to the lined baking sheet. Drizzle with 2 Tbsp oil and toss with the seasoning blend.
- Spread out the potatoes across the sheet and bake at 400F for 35-40 minutes until the potatoes are tender.
POTATO BOWL VARIATIONS
Switch up the flavors in this bowl by swapping out the ingredients:
- Potato Swaps– Instead of regular cubed potatoes, use shredded potatoes, tater tots, or sweet potatoes!
- Veggie Swaps– Add more veggies to the potatoes, add mushrooms, spinach, kale, broccoli, or any other veggie you like.
- Egg Swaps– Swap out the scrambled eggs or regular eggs or egg whites.
- Meat Swaps– Instead of sausage links, use ground sausage, turkey bacon, regular bacon, chorizo, or keep it a vegetarian.

- Option 1– Make the potatoes ahead of time up to 3-4 days! When ready to enjoy reheating the potatoes, cook the eggs and sausage and assemble the bowls in under 15 minutes!
- Option 2– Make the potato bowls full, the potatoes, eggs and meat and once cooled, stored in airtight containers in the fridge for 3-4 days. When ready to enjoy, reheat and top with toppings and serve.

Ingredients
Potatoes-
- 1 1/2 lbs cubed potatoes Yukon, idaho, gold, or red

- 1 ½ tsp salt
- ½ tsp ground black pepper
