Breakfast Quesadilla Recipe

What better way to start the day than with this breakfast quesadilla recipe! Crispy tortillas loaded with fluffy eggs, your choice of breakfast meat and cheese.

Ingredients

  • 2 medium flour tortillas
  • 8 oz bacon chopped
  • 2 large eggs
  • 2 Tbsp whole milk
  • tsp salt
  • tsp ground black pepper
  • 1 cup shredded cheese

Instructions

  • In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
  • Add chopped bacon to a skillet and cook on medium heat for about 6-8 minutes, until crispy and golden. (You can cook the bacon ahead of time and store it in the fridge until ready to assemble quesadillas.)
  • Remove all the bacon grease from the skillet, except for about 2 teaspoons. Heat the skillet on medium high heat.
  • Pour the scrambled egg mixture into the hot skillet and cook for about 2-3 minutes, mixing and scrambling as it cooks.
  • Once the eggs are done, add the breakfast meat to the eggs and mix to combine.
  • Lay out the tortillas and add cheese and the egg mixture on one half of the tortillas, dividing evenly between both tortillas.
  • Fold the empty side of the tortilla over the full side, creating a half moon shape.
  • Carefully add the quesadillas to a clean skillet and cook on medium low heat. Cook until both sides of the tortillas are golden and crisp and the cheese has melted.
  • Remove the tortillas from the skillet and slice into 2-3 pieces.
  • Serve immediately with desired sides.
