Have dinner on the table in under 30 minutes with this quick and easy oven baked cod recipe! Fresh cod fillets seasoned in a homemade spice blend and then baked with butter and lemon. The cod fish comes out flakey and buttery, the perfect dinner idea that is loaded with flavors. If you love fish, then you need to try this simple cod fish fillet recipe.
WHAT YOU NEED-
- Cod Fillets– For the best results, you want to use fresh cod fish. You can also use frozen cod, just be sure to thaw before you prepare the dish.
- Oil– Coating the fillets in a little bit of oil helps the seasoning to adhere to the fish and gives you tender, moist fish. I like using olive oil, but you can also use canola oil or any other oil you like to use.
- Seasoning– To season the cod fish, I love using my homemade blackening seasoning. You can use a store-bought blackening seasoning or even swap for a Cajun seasoning or Old Bays fish seasoning.
- Lemon– Adding lemon slices to this dish gives the lemon a little citrus kick, so good! Adding lemon slices is optional.
- Butter– Salted or unsalted butter can be used. Adding slices of butter to the fillets, allows the butter to melt as it bakes. Giving you buttery, rich oven baked cod! You can leave out the butter if you are looking for a healthier dish.
HOW TO BAKE COD FISH
Have this dish prepared and ready to bake in just 5 minutes! Such an easy, effortless dinner idea.
- Preheat the oven and line a baking sheet with parchment paper.
- In a small bowl, combine homemade blackening seasoning.
- Rinse and pat dry the cod fillets. (If you have a large cut of cod, cut it into even sized fillets.)
- Coat with oil and then season on both sides, ensuring the entire fillet is coated in seasoning.
- Spread the fillets apart on the baking sheet and add sliced lemons around the fish. Add sliced butter chunks on top of the fillets and around.
- Bake until the fish is no longer translucent and flaky. (The internal temperature should be 145°F.)
- Remove from the oven, top with freshly squeezed lemon juice and chopped cilantro.
- Serve immediately with desired sides.

QUESTIONS YOU MIGHT HAVE:
Cod cooks fast, so be sure to be watchful! When the fish turns white and is no longer translucent is a great indicator if it is done. Cooked cod fish will have an internal temp of 145°F.
Cod fish becomes rubbery because of overcooking! Be sure not to overbake the fish.
The best thing about this simple recipe is that you don’t need to marinade for long. Just coat the fish in seasoning and bake!
If you want to prepare this dish ahead of time, you can coat the fish in oil and seasonings for up to 1-2 days.
Once the fish is completely cool, transfer to an airtight container and store in the fridge for 2-3 days. Be mindful of how fresh the fish is to avoid any issues.

Ingredients
- 1 lb cod fish fillets fresh or frozen
- 1 1/2 Tbsp olive oil
- 2 Tbsp blackening seasoning
- 4 lemon slices optional
- 2 Tbsp cubed unsalted butter optional
Instructions
- Preheat the oven to 400°F and line a 9×13 baking sheet with parchment paper.
- Rinse and with a paper towel pat dry the cod fillets. (If you have a large slab, cut into even sized fillets.)1 lb cod fish fillets, fresh or frozen
- Coat the fillets with olive oil on both sides, then coat with blackening seasoning. Be sure the fillets are fully coated on all sides.1 1/2 Tbsp olive oil, 2 Tbsp blackening seasoning
- Lay out the seasoned fillets onto the lined baking sheet. Then add lemon slices around the fish and cubed butter around and on top of the fillets.4 lemon slices, optional, 2 Tbsp cubed unsalted butter, optional
- Bake at 400°F for 12-15 minutes, or until fish is cooked through. (Internal temperature should be 145°F.)
- Remove from the oven, top with freshly chopped cilantro and freshly squeezed lime juice.
- Serve immediately with desired sides.
