Delicious and easy baked cod recipe that makes for the perfect weeknight dinner! Cod fillets seasoned and baked until tender, flakey, buttery and loaded with flavors.

Preheat the oven to 400°F and line a 9x13 baking sheet with parchment paper.
Rinse and with a paper towel pat dry the cod fillets. (If you have a large slab, cut into even sized fillets.)
1 lb cod fish fillets, fresh or frozen
Coat the fillets with olive oil on both sides, then coat with blackening seasoning. Be sure the fillets are fully coated on all sides.

Lay out the seasoned fillets onto the lined baking sheet. Then add lemon slices around the fish and cubed butter around and on top of the fillets.
4 lemon slices, optional, 2 Tbsp cubed unsalted butter, optional
Bake at 400°F for 12-15 minutes, or until fish is cooked through. (Internal temperature should be 145°F.)
Remove from the oven, top with freshly chopped cilantro and freshly squeezed lime juice.
Serve immediately with desired sides.
