SHRIMP LO MEIN
An Asian-inspired dish that makes for an effortless weeknight dinner. The lo mein noodles combined with the veggies, shrimp and stir fry sauce brings so much flavor. Not only is this dish delicious, but it is so easy to make and so much cheaper than ordering take-out! This stir fry recipe is going to become a kitchen staple.

WHAT YOU NEED-
- Shrimp– For this recipe, we like to use our air fryer shrimp! You can use your favorite method for cooking shrimp or sauté before the veggies!
- Noodles– You want to use lo mein noodles for the best results, but you can also substitute it for regular pasta. Pastas that will work for this dish: spaghetti, linguine, and fettuccine pasta.
- Coleslaw Mix- For easy prep, we love to use the store-bought bag of coleslaw mix. You can also just use shredded cabbage and julienned carrots!
- Peppers– Regular bell peppers or mini bell peppers will work great!
- Green Onion– The fresh green onion brings so many flavors to this dish.
- Red Pepper Flakes– If you like spicy food, then add some red pepper flakes to the dish for a kick.
- Sauce– In this recipe, we use a delicious homemade stir fry sauce! You can also use your go to store-bought stir fry sauce, it works just as good.
HOW TO MAKE SHRIMP LO MEIN
This delicious dinner idea comes together so quickly and is so easy to make!
- Cook the lo mein noodles according to package instructions.
- In a bowl, combine the ingredients for the homemade stir fry sauce.
- Prepare the shrimp with your favorite cooking method, such as the air fryer method.
- In a skillet or wok, sauté the peppers until tender. Add the coleslaw mix, green onion and cook until cabbage is tender.
- Cook the shrimp with desired cook method and add the shrimp to the skillet.
- Pour in the stir fry sauce mixture to the skillet and bring to a simmer, allowing the sauce to thicken.
- Once the sauce has thickened, add the cooked noodles into the skillet and mix until well combined.
- Top with sesame seeds and freshly chopped green onions and serve immediately.
STORING & REHEATING
This lo mein dish is the best when served immediately, but the leftovers taste great just as well!
- Storing– Store in the fridge in an airtight container or up to 3-4 days.
- Reheating– Reheat in the microwave or skillet until warmed, so good!
VARIATIONS
Lo mein is a classic Asian-inspired dish and there are so many different variations to the dish. Whether you change out the choice of protein or veggies, you can customize this dish to your liking! Here are some of substitutes or additions that we like:
- Protein– You can change out the shrimp for chicken or steak. You can also double up on protein and make it shrimp and chicken or shrimp and steak!
- Veggies– Load up on veggies or switch out the different veggies in this dish. We love using mushrooms, peppers, green beans, snap peas, bean sprouts, broccoli, squash, zucchini, carrots, cabbage, etc.
Best Shrimp Lo Mein
Ingredients
- 8 oz lo mein noodles
- 10 oz shrimp peeled and deveined
- 2 Tbsp oil for sautéing
- ½ bell pepper sliced
- 2 cups coleslaw mix
- 1 green onion chopped
- ¼ tsp red pepper chili flakes
Stir Fry Sauce-
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 3/4 cup broth chicken, or beef
- 2 garlic cloves minced
- 1 ½ Tbsp cornstarch
- 1 tsp sesame seeds optional
Instructions
- Cook the noodles according to package instructions. Once cooked, drain, and add back into the pot and cover with the lid to keep warm.
- Peel and devein the shrimp and rinse. Completely pat dry this shrimp. Season with salt and pepper, to taste.
- In a bowl, add all the ingredients for the lo mein sauce and whisk until well combined.
- In a skillet or a wok, heat 1 Tbsp oil on medium high heat. Once the oil is hot, add the shrimp and cook for about 4-5 minutes, or until opaque. Remove from the skillet and cover to keep warm.
- Heat 1 Tbsp oil on medium heat, once hot add the peppers and cook until tender, about 3-4 minutes. Once tender add in the coleslaw mix, green onion, and red pepper flakes and cook until tender.
- Add the shrimp back into the skillet. Pour in the stir fry sauce mixture and simmer until the sauce thickens.
- Once the sauce has thickened, add the noodles in and mix until well combined.
- Top with freshly chopped green onions and sesame seeds and serve immediately.
