BREAKFAST SANDWICH

Start your day off right with the ultimate breakfast bagel sandwich! Fluffy eggs, cheesy, and crispy bacon in between a warm toasted bagel. This bacon egg and cheese bagel sandwich is easy to make and perfect for busy mornings, and great for on the go! Totally customize this sandwich to your liking to have a great start to the day.

WHAT YOU NEED-

  • Bagel– For this sandwich you can use regular bagel, Greek Yogurt bagels, or even bagel-thins for a lighter sandwich! Use your favorite flavor bagel: plain bagel, everything bagels, onion bagels, asiago bagels, jalapeno cheddar bagels, or sesame bagels.
  • Bacon– For the meat, this recipe calls for crispy bacon (check out my post on how to cook bacon 5 different ways). You can also swap the classic bacon for turkey bacon! You can also swap out the bacon for any other breakfast meat, such as breakfast sausage, ham or turkey!
  • Cheese– Any of your favorite sliced cheese will work. Cheeses such as Colby jack, Swiss, cheddar and if you like spicy, use pepper jack!
  • Egg Mixture– This recipe calls for a scrambled egg, but you can also use just a classic fried egg. For the egg mixture, eggs, milk, salt, pepper, and green onions are used. You can opt out of the green onion and the milk!
  • Spread– To avoid a dry sandwich, spread the bagels with your choice of spread! You can use cream cheese, mayo, spicy mayo, chipotle mayo, or your favorite sauce for sandwiches!

HOW TO MAKE A BAGEL SANDWICH

Have this delicious bacon egg and cheese bagel sandwich ready in no time!

  1. Cook Meat– Using your preferred method, cook the bacon until golden and crispy. If you are using a different breakfast meat, cook it accordingly.
  2. Scramble Eggs– In a bowl, whisk together everything for the egg mixture. Pour the mixture into a heated skillet with butter or oil and cook on low, covering with a lid.
  3. Once the egg mixture has solidified, fold the egg into a square to fit on the bagel.
  4. Remove from heat and top the egg with cheese and close with the lid to allow the cheese to melt.
  5. Toppings– Prepare all your desired additives for the bagel sandwich. Toast the bagels until slightly toasted and warm.
  6. Assemble– Spread the toasted bagels with your choice of spread, then top with the cheesy egg, bacon, and any other desired additives and close the sandwich with the top slice of the bagel.
  7. Serve immediately, while still warm, with desired sides.

MAKING AHEAD & STORING

These delicious and easy homemade bagel sandwiches are great to make ahead of time, for the week or to freeze for the future!

  • Option 1– Follow the recipe and once the sandwich is assembled and cooled. Wrap in plastic wrap or parchment paper and add it into a plastic bag and store it in the fridge for 2-3 days.
    • To Enjoy– Wrap the sandwich in a paper towel and add to the microwave to warm. Or pop in the air fryer or toaster oven until warm.
  • Option 2– Cook the bacon and eggs ahead of time and store it in the fridge for 1-2 days, until ready to assemble.
    • To Enjoy– To enjoy, warm the bacon and eggs. Toast the bagels and assemble the sandwich and enjoy.
  • Freeze Option– Make a few of these sandwiches and freeze for the future! You do not want to add your sauce or extra toppings when freezing, you can add that after you reheat it! Once the sandwiches are wrapped and sealed in a Ziploc bag, freeze for up to 1-2 months.
    • To Enjoy– Remove from the freezer and wrap in a paper towel and thaw in the microwave and then warm, add your desired toppings and serve.

Can I swap out the bagel for different bread?

Yes! You can swap out the bagel for a croissant, English muffin, sandwich bread, baguette, ciabatta rolls, or even make it a McGriddle and use pancakes!

Can I use a form to make perfectly round eggs?

Yes, instead of folding the scrambled egg mixture, just use molds and make perfectly round shaped eggs!

Will my bagel sandwich leftover get soggy?

If you add your sauce and tomatoes, it will get a little soggy. I recommend making these plain, just with bacon, egg and cheese. Then right before enjoying adding the toppings, so that you don’t have leftover sandwiches that will go soggy.

Breakfast Bagel Sandwich

Ingredients

  • 1 whole bagel
  • 2 slice bacon cooked and halved
  • 1 slice cheese American, colby, swiss
  • 1 Tbsp mayo or cream cheese optional

Scramble Egg Mixture-

  • 2 large eggs
  • 1 Tbsp whole milk
  • 3 tsps chopped green onion optional
  • ¼ tsp salt
  • tsp ground black pepper
  • oil or butter for sauteeing

Instructions

  • Heat skillet on medium high heat. Once heated, add bacon sliced into the skillet.
  • Cook on medium heat for 4 minutes, flip and cook for an additional 4-5 minutes or until desired crispiness is reached. Remove from the skillet and place on a paper-towel lined plate, cover with foil.
  • In a bowl, whisk together the egg, milk, salt, pepper, and green onion.
  • Spray a medium skillet with baking spray and heat on medium heat.
  • Pour the egg mixture into the skillet and cover with a lid for 1 minute. Flip the egg using a large spatula for easier flipping. Fold the egg into a square to fit on the bagel and add the cheese on top.
  • Turn off the heat and cover with a lid to allow the cheese to melt. Meanwhile, toast the bagel and add the desired spreads.
  • Assemble the bagel sandwich by adding the bacon and cheesy egg and close. Serve with desired dipping sauces.
