BREAKFAST PIZZA

Have you ever started the day with a sheet pan breakfast pizza? This simple sheet pizza is packed with all the classic breakfast flavors. Pizza dough loaded with sausage gravy, scrambled eggs, crispy bacon, and melted cheese. This pizza is perfect for weekday prep or a brunch party, the perfect way to begin your day.

WHAT YOU NEED-

  • Pizza Dough– You can use your favorite pizza dough for this recipe, either homemade or store-bought dough. For this recipe, Pillsbury pizza crust is a great option!
  • Pizza Sauce– For this breakfast pizza, homemade white gravy is made with butter, flour, milk and seasonings. You can also use sausage gravy mix! I recommend McCormick sausage gravy mix.
  • Cheese– Any shredded cheese will work for this pizza. Shredded Colby jack, mild cheddar, Mexican blend, mozzarella, or pizza blend. For fresher flavors, shred your own cheese.
  • Bacon– Use either classic bacon or turkey bacon for this pizza. Check out my recipe on making the perfect bacon. Bacon bits add so many scrumptious flavors to this pizza.
  • Scrambled Eggs– For the scrambled eggs mixture, you want to use eggs, milk, salt, and pepper.
  • Greens– Freshly chopped green onions or chives add extra flavors, this is totally optional.

HOW TO MAKE BREAKFAST PIZZA

Have this pizza in the oven in minutes with just a few simple steps.

  1. Preheat the oven and spray a baking sheet with baking spray.
  2. Roll out the pizza crust onto the baking sheet, brush with out and poke holes in the dough. Prebake for about 8-10 minutes.
  3. Meanwhile, in a saucepan melt butter and then whisk with flour. Pour in the milk, salt, pepper, and garlic and bring to a simmer, allowing the sauce to thicken.
  4. In a bowl, whisk together the mixture for the scrambled eggs.
  5. Heat a skillet on medium heat and spray with baking spray, butter or oil.
  6. Pour the egg mixture into the skillet and cook for 2-3 minutes, mixing to create scrambled eggs.
  7. Pour the gravy over the prebaked pizza crust, spread it evenly throughout the crust, leaving about 1/2 inch around for the crust.
  8. Top the gravy with the scrambled eggs, shredded cheese and then chopped bacon.
  9. Bake for an additional couple minutes, or until the cheese has melted.
  10. Remove the pizza from the oven, slice and then serve immediately!

MAKE AHEAD-

Don’t want to spend the early mornings in the kitchen? Make this easy breakfast pizza ahead of time! There are several different ways that you can make this pizza in advance.

  • Option 1– Make the pizza full ahead of time, slice and allow it to cool. Once cooled, transfer the pizza slices to a container or plastic bag and store it in the fridge for 3-4 days!
    • To Enjoy– When ready to enjoy, warm in the microwave, oven, air fryer, or toaster oven until reheated. You can also enjoy it cold, just like regular pizza.
  • Option 2– Prepare everything, up to assembling the pizza. Store everything separately in containers or bags in the fridge for 2-3 days. Cover the cooled pre-baked pizza dough in the fridge.
    • To Enjoy– In the morning, just assemble the pizza and bake until warmed and the cheese has melted.
  • Freezer Option– Once the pizza is baked, cooled, and sliced, transfer to freezer safe bags and freeze for up to 3-4 months!
    • To Enjoy– Thaw the night before and reheat in the morning. You can also thaw in the microwave the morning of!

You don’t have to just stick to eggs, bacon and cheese as the topping for this breakfast pizza! Load up your pizza with all your favorite toppings:

QUESTIONS YOU MIGHT HAVE:

Can I add sausage to the biscuit mixture?

Yes! Sauté store-bought breakfast sausage or homemade ground breakfast sausage and then mix it into the creamy gravy.

Can I use sausage gravy mix instead?

Yes! You can used sausage gravy mix or canned sausage gravy instead!

Why do I have to prebake the pizza crust?

Pre-baking the crust helps ensure that the crust gets fully cooked without overcooking or drying out the toppings. Since your toppings are already cooked, you don’t need to bake them as long.

Can I use Pillsbury crescent rolls as the base instead of pizza dough?

Yes, you can swap out the pizza dough for crescent rolls, just shape it and work with it, as it is pizza dough.

This breakfast pizza recipe is a unique breakfast that everyone will love! Pizza dough loaded with gravy, scrambled eggs, cheese and bacon.

  • 13.8 oz pillsbury pizza dough
  • 1 cup shredded cheese
  • 8 oz chopped bacon cooked
  • chopped green onion optional

Prebake Pizza Crust-

  • Preheat the oven to 425°F and spray a 15×10 inch baking sheet with baking spray.
  • Roll out the pizza dough onto the prepared baking sheet, stretching it out to all the edges.
  • Brush the crust with olive oil and then with a fork, poke holes all over the crust. (This ensures your crust doesn’t bake with bubbles.)
  • Bake the crust at 425°F for 8-10 minutes, or until the crust begins to slightly golden. (Do NOT overbake.)

Pizza Sauce-

  • As the crust bakes, prepare the toppings. In a skillet or saucepan, melt the butter on medium heat.
  • Once melted, whisk in the flour to create a thick mixture. Pour in the milk, salt, pepper, and garlic powder and whisk to combine.
  • Bring the mixture to a simmer, and allow to simmer for about 1-2 minutes, or until the gravy thickens. Remove from heat and set aside to cool.

Scrambled Eggs-

  • In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Heat a skillet over medium heat and lightly spray with baking spray, butter, or oil to prevent sticking.
  • Pour the egg mixture into the heated skillet and cook for 2-3 minutes. Stir continuously to make fluffy scrambled eggs.

Assemble Pizza-

  • When the pizza crust is done pre-baking, remove it from the oven and assemble the pizza.
  • Gently spread the gravy evenly over the crust, leaving about 1/2 inch around the edge for the crust.
  • Add the scrambled eggs on top of the gravy. Sprinkle with shredded cheese, followed by chopped bacon, ensuring an even distribution of toppings.
  • Bake the pizza at 425°F for an additional 5-6 minutes, or until the cheese has fully melted.
  • Once the cheese is melted, remove the pizza from the oven. Slice it and serve immediately, while hot.
