STEAK QUESADILLA RECIPE

These cheesy steak quesadillas are so easy to make and are great for lunch, dinner or even as an appetizer! Tender, juicy steak is cooked with savory mushrooms and caramelized onions, then layered with plenty of gooey melted cheese inside a crispy, golden tortilla. Pair these hearty quesadillas with your favorite sides for a dish everyone will love!

WHAT YOU NEED-

  • Tortillas– You want to use medium burrito size flour tortillas for quesadillas. You can also use carb balance tortillas, protein tortillas, or any other tortilla options you prefer.
  • Sauce– To avoid dry quesadillas, use the popular homemade quesadilla sauce recipe, ranch or just mayo.
  • Steak– For the best results, you want to use a good quality cut of beef! Cuts like sirloin, flank steak, strip steak, etc. You can also swap the steak for chicken or pork. You can also use leftover Chipotle steak for these quesadillas!
  • Mushrooms– You can use fresh portobello or white button mushrooms. Canned mushrooms will also work, just drain before sautéing.
  • Onions– The onions combined with mushrooms and steak come together so well! You can use red onion, sweet onion, or cooking onion.
  • Cheese– Use your go-to shredded cheese, like Mexican blend, mild cheddar, mozzarella, pizza blend, or Monterey jack cheese.
  • Flavor– For the seasoning, this recipe uses salt, pepper, garlic, and paprika. You can also use your go-to seasoning mixtures, like blackening seasoning or taco seasoning.

HOW TO MAKE STEAK QUESADILLAS

The best thing about this mushroom and steak quesadilla recipe is how easy and fast it comes together!

  1. Heat a large skillet on medium high heat with a drizzle of olive oil. Once hot, add the sliced mushrooms and onions and cook until tender.
  2. Add the cubed steak and seasonings to the skillet and sauté until the steak is browned and crispy. (You do not want to overcook the steak, or you’ll get dry steak. Since the steak is in tiny chunks, it will cook quickly.)
  3. In a small bowl, prepare the quesadilla sauce.
  4. Lay out the tortillas and spread both with the sauce mixture. Divide the cheese and filling mix evenly between both tortillas, adding to only half of the tortilla.
  5. Take the empty side of the tortilla and fold, press down to seal.
  6. Gently add the quesadillas to a large skillet and heat on medium low heat. Cook until crispy and browned, flip and repeat. (Be sure to cook on low heat to avoid the tortillas from burning before the center has warmed and the cheese has melted.)
  7. Once the cheese has melted and the tortillas are crispy, remove from the skillet.
  8. Slice and serve with desired sides and sauces.

STEAK QUESADILLA VARIATIONS-

Have fun with the different things you add to your quesadilla filling!

  • Plain– Want just a plain steak quesadilla? Leave out the mushrooms and onions and just have a simple steak and cheese quesadilla.
  • Steak & Shrimp– Add cooked shrimp to the filling for a hearty steak and shrimp quesadilla.
  • Philly Cheesesteak– Add green peppers to this mixture for a delicious Philly cheesesteak quesadilla.
  • Steak Fajita– Swap the chicken for steak in my chicken fajita quesadilla recipe.

QUESTIONS YOU MIGHT HAVE:

Do I slice or cube the steak?

The way you cut the steak is totally up to you, I like to cube my steak so that I can get tender and juicy steak in every bite.

Do I have to oil the skillet before adding the quesadillas?

If you are using a non-stick skillet, you don’t have to add any oil. For extra crisp, you can totally spray the tortillas with cooking spray.

Can I air fry these quesadillas?

Yes, you can add the quesadillas to the air fryer and cook at 375°F for about 5-6 minutes or until crispy and the cheese has melted.

Can I make this recipe ahead of time?

Yes! For an easier and quicker recipe, you can prep by making the steak and mushroom filling ahead of time. Store in the fridge for 2-3 days, when ready to enjoy, just reheat the filling, and continue with the recipe.

How do I store leftover steak quesadillas?

Once the quesadillas are cooled, cover or add to an airtight container and store it in the fridge for 3-4 days.

What dipping sauce goes with steak quesadillas?

You can dip your quesadilla in the quesadilla taco sauce, taco bell mild sauce, sour cream, creamy chipotle mayo, Ranch or any other dipping sauce you like.

  • In a small bowl, combine the seasoning mixture: salt, pepper, garlic powder, and paprika.
  • Heat a large skillet over medium high heat with a drizzle of olive oil. Once hot, add the sliced mushrooms and onions and sauté for about 3-4 minutes, or until tender.
  • Add the cubed steak and seasonings to the skillet, sautéing until the steak is browned and slightly crispy, for about 2-3 minutes. (Be careful not to overcook the steak—because it’s cut into small pieces, it cooks quickly and can dry out.)
  • In a small bowl, combine the mayo, sour cream, chopped jalapenos, jalapeno juice, salt, paprika, garlic powder, cumin, and cayenne pepper.
  • Lay out the tortillas and spread the sauce evenly over each one. Evenly divide the cheese and steak mixture between the tortillas, placing it on one half of each.
  • Fold the empty side of the tortilla over the filling and press down gently to seal.
  • Carefully transfer the quesadillas to a large skillet over medium-low heat. Cook until golden and crispy, then flip and cook the other side. (Keeping the heat low prevents the tortillas from burning before the cheese melts and the filling warms through.)
  • Once the cheese is melted and the tortillas are crisp, remove from the skillet.
  • Slice and serve with your favorite sides and sauces.
