The ultimate recipe for Buffalo chicken egg rolls! Tender shredded chicken, spicy buffalo sauce and cheese, wrapped in a crispy golden wrapper, the perfect appetizer!

BUFFALO CHICKEN EGG ROLLS

Craving something crispy, spicy, and downright delicious? Look no further than these irresistible Buffalo chicken egg rolls! These crispy egg rolls are packed with a juicy and cheese buffalo chicken mixture. Whether you’re looking for an appetizer, snack, or party treat, these egg rolls are sure to be a crowd favorite.

WHAT YOU NEED-

  • Wrappers– Make sure to use egg roll wrappers or egg roll wraps, which are commonly available at most grocery stores.
  • Chicken– This recipe calls for shredded chicken, you can use rotisserie chicken, canned chicken or make your own shredded chicken. You can also use cubed or thinly sliced chicken breast instead of shredded chicken.
  • Hot Sauce– For the best flavor, use Frank’s Buffalo hot sauce, though any buffalo hot sauce will also work.
  • Ranch– Adding ranch enhances the chicken’s flavor! You can use regular, buttermilk, or light ranch, or even swap it for blue cheese dressing.
  • Green Onion– Freshly chopped green onion adds so much flavor to this recipe! I love adding green onion or cilantro, but if you don’t like greens, you can just leave it out.
  • Flavors– To season the filling, I use salt, pepper, garlic, and paprika.
  • Cheese– Any shredded cheese will work for this recipe. Either shredded Colby jack, mild cheddar, taco blend or even mozzarella cheese will work.

HOW TO MAKE BUFFALO CHICKEN EGGS ROLLS

These crispy spicy egg rolls come together so quickly and are sure to become a favorite snack, appetizer or meal!

  1. In a bowl, combine all the ingredients for the buffalo chicken filling.
  2. Assemble the egg rolls, dividing the filling evenly, scooping 1 Tbsp of filling and cheese in the center of the wrapper.
  3. Using water, brush all sides of the wrapper to get wet. Fold three corners in, creating an open envelope shape. Then roll the wrapper tightly to seal.
  4. Repeat with all the filling, creating about 14-15 egg rolls.
  5. Cook the egg rolls with desired method, until crispy and golden brown.
  6. Add the serving dish and top with drizzled Ranch, hot sauce, and chopped greens.
  7. Serve immediately with desired sides and sauces.

COOKING METHODS

There are a couple different methods to cooking your egg rolls! Here are 3 ways you can make egg rolls:

DEEP FRYING

  1. Add oil to a pan or deep skillet, covering about 2-3 inches deep. Heat the oil on medium high heat until it reaches 350°F.
  2. Carefully add egg rolls to the oil, enough to fill the pot, but not overcrowd. Fry for about 5-6 minutes, or until the egg rolls are golden brown.
  3. Remove from the oil and add the egg rolls to a paper towel lined plate. Cover with foil as you fry the rest to keep them warm.
  4. Serve immediately while it is still hot.

AIR FRYER

  1. Spray the air fryer basket with baking spray and add the egg rolls to the basket. Do NOT overcrowd. Lightly spray the egg rolls with baking spray, or brush with oil.
  2. Air fryer at 400°F for 8-10 minutes or until crispy and golden.
  3. Serve immediately while it is still hot, with desired sides.

BAKING

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Add the assembled egg rolls onto the baking sheet and with a pastry brush, brush them all lightly with oil. (You can use baking spray instead if you prefer.)
  • Bake the egg rolls at 400°F for 16-18 minutes or until golden and crispy.
  • Serve immediately.

HOW TO ASSEMBLE EGG ROLLS

TIPS BEFORE YOU BEGIN

  1. The assembly process is like making an envelope.
  2. Keep a small bowl of water nearby to speed things up. The water acts as glue, so be sure to brush it along all edges and seams to seal the egg rolls completely.
  3. While assembling, cover the finished egg rolls with a damp paper towel to prevent them from drying out.
  4. Make sure not to place the assembled egg rolls too close together while the water is drying, or they may stick to each other and tear when you try to separate them.

EGG ROLL ASSEMBLY

  1. Place an egg roll wrapper on a flat surface, oriented in a diamond shape.
  2. Spoon the filling into the center, positioning it closer to the bottom of the wrapper.
  3. Fold the bottom corner (the one closest to you) over the filling. Next, fold in the side corners towards the filling, pressing them tightly. Wet your fingers and run them along the edges to seal the folds, using the water like glue. At this stage, your wrapper should resemble an open envelope.
  4. Apply water to the top corner and tightly roll the egg roll until fully wrapped and sealed. Add more water if necessary.
  5. Continue this process until all the filling is used up.

ASSEMBLING AHEAD OF TIME

You can assemble these ahead of time and refrigerate or freeze them to make them later!

  • Refrigerate– Layout the assembled egg rolls on a baking sheet or tray in a single layer. Cover with plastic wrap and store it in the fridge for up to 24 hours! When ready, cook and enjoy!
  • Freeze– These are great to freeze for the future! Line a baking sheet with parchment paper and arrange the uncooked egg rolls in a single layer, making sure they don’t touch. Freeze for about an hour until firm, then transfer to a freezer-safe bag and store for up to 4 months
    • Serve– When ready, just cook frozen, no need to thaw! Be sure to add a few extra minutes to the cooking time.

STORING BUFFALO CHICKEN EGG ROLLS

Leftovers? No worries! You can refrigerate or freeze leftovers!

  • Fridge– Once the egg rolls are cooled, cover or transfer to an airtight bag or container and store in the fridge for 3-4 days!
  • Freezer– Add the cooled rolls to a freezer safe bag and freeze for up to 3-4 months! To enjoy, just pop in the air fryer or microwave until thawed and warmed through.

Assemble Egg Rolls-

  • In a large bowl, combine shredded chicken, hot sauce, Ranch, chopped green onion, salt, pepper, garlic powder, and paprika.
  • Lay out an egg roll wrapper on a flat surface, laying it down in a diamond shape.
  • Add 1 Tbsp of shredded cheese and 1 Tbsp of the buffalo chicken filling to the lower center of the wrapper. Add it more towards the bottom of the wrapper.
  • Fold the bottom corner (the one closest to you) over the filling.
  • Then fold in both side corners towards the filling tightly. Dip your fingers in water and run along the edges to seal, or “glue”, the folds in place. At this point, it should look like an open envelope.
  • Run water along the last open corner, then tightly roll until fully wrapped and sealed, add more water if you need.
  • Repeat until all the filling is gone, this recipe makes about 14-15 buffalo chicken egg rolls.

Frying Egg Rolls-

  • Heat oil in a pot or deep skillet to 350°F. Carefully lower the egg rolls into the hot oil and fry for 5-6 minutes, turning halfway through, until they are golden brown. Avoid overcrowding the pan.
  • Once cooked, remove the egg rolls and place them on a paper towel-lined plate to drain excess oil. Continue frying the remaining egg rolls.
  • Serve hot with your preferred sides.

Air Frying Egg Rolls-

  • Spray the air fryer basket with baking spray and add the egg rolls to the basket. Do NOT overcrowd. Lightly spray the egg rolls with baking or oil spray.
  • Air fry at 400°F for 8-10 minutes or until golden and crispy, flipping halfway to ensure all around crisp.
  • Remove the egg rolls from the air fryer basket and serve with desired sides.
