This BBQ chicken quesadilla recipe is top tier! Crispy, golden tortillas filled with juicy shredded chicken, sweet and tangy barbecue and gooey cheese.
Add shredded chicken, barbecue sauce, salt, pepper, garlic powder, paprika, and cilantro to a bowl and mix until combined. (If using pre-cooked or cold shredded chicken, warm it up before mixing to ensure even heating when cooking the quesadillas.)
Lay out the tortillas and lightly brush one side of each tortilla with barbecue sauce using a pastry brush.
On one half of each tortilla, add shredded cheese, the chicken mixture, and any additional desired toppings.
Fold the empty side of each tortilla over the filling to form a half-moon shape.
Add the quesadillas to a large skillet and cook on medium low heat. (Avoid high heat, as it can cause the tortillas to brown too quickly before the filling is heated through.)
Cook for about 3-4 minutes per side, until both sides are golden brown and the filling is warm, and the cheese has melted.
Remove the quesadillas from the skillet and slice into 2-3 pieces.
