SHEET PAN SAUSAGE AND VEGGIES
This sheet pan sausage and veggie recipe is the perfect combination of simplicity and flavor, making it a go-to for busy weeknight dinners. With juicy sausage, colorful vegetables, baby potatoes tossed in a blend of savory seasonings, all thrown onto a sheet pan and roasted. Not only is this dinner idea hassle-free and simple, but it is also healthy!
WHAT YOU NEED-
- Sausage– This recipe calls for smoked sausage or kielbasa, either pork, chicken or turkey will work great. Using precooked sausage makes this recipe all the easier!
- Peppers– You can use any color bell pepper you prefer! Red, orange, yellow or even green can be used. Mini bell peppers are also an option.
- Onion– Either sweet, cooking or red onion can be used. I love using red onions for all my cooking!
- Zucchini– Adding zucchini gives more flavors and makes this dish heartier.
- Potatoes– I love adding baby potatoes to this sheet pan recipe! You can use either baby red, yellow, or a mix of both. Be sure to use baby potatoes, they will cook through during the cook time.
- Oil– You want to drizzle the veggies and sausage in olive oil to give them a crispy texture without them getting dry. You can swap olive oil or canola, vegetable, avocado or any other preferred oil.
- Flavors– To season this sheet pan dish, this recipe calls for salt, pepper, garlic powder, Italian, and paprika. You can use any of your go-to seasoning blends, I love using the Gourmet Seasoning.
HOW TO MAKE SAUSAGE AND VEGGIE SHEET PAN DINNER
This healthy sheet pan dinner comes together so quickly!
- Preheat the oven and line a large baking sheet with parchment paper, this helps with the clean up!
- Rinse and cut all the veggies, potatoes, and sausage.
- Add everything to the line sheet pan and toss in the oil and seasoning until fully combined.
- Then spread everything flatly, for even roasting. Roast until all the veggies and potatoes are tender.
- Remove from the oven and top with fresh ground black pepper, chopped greens and grated parmesan, if desired.
- Serve.

QUESTIONS YOU MIGHT HAVE:
No! You can leave out the potatoes and make it with just veggies and sausage and serve it with a side of Air Fryer Roasted Potatoes, Cilantro Lime Rice or creamy Mashed Potatoes!
Be sure to use a large sheet pan, so that the ingredients lay flat and don’t overlap each other. I recommend using a 15×17 sheet pan!
Yes! This can totally be a vegetarian dish, just opt out of adding sausage.
If you use baby potatoes or cube the potatoes into small even pieces, then the potatoes will for sure cook through.
For this recipe, you want to use smoked sausage, like kielbasa! Using pre-cooked sausage makes this dish cook faster.

Ingredients
- 12 oz sliced smoked sausage turkey, beef or pork
- 2 cups small broccoli florets
- 1 bell pepper cubed
- 1/2 medium red onion cubed
- 2 cups zucchini sliced
- 2 cups baby potatoes halved
- 1/4 cup oil olive or canola
- 1½ tsp salt
- ½ tsp ground black pepper
- 1½ tsp garlic powder
- ½ tsp Paprika
- 1 tsp Italian seasoning
Instructions
- Preheat the oven to 400°F and line a large baking sheet with parchment paper or foil for easier cleanup.
- Cut all the veggies and sausage into even sized pieces, for uniform cooking. Half the baby potatoes.
- In a small bowl, combine the salt, pepper, garlic powder, paprika, and Italian seasoning.
- Add the cut broccoli, bell peppers, red onion, zucchini, baby potatoes, and sausage to a large bowl. Toss with the oil and seasoning blend until well combined.
- Spread the seasoned ingredients evenly across the lined baking sheet.
- Bake at 400°F for 30-35 minutes, or until all the ingredients are fully cooked through. Remove from the oven and top with desired toppings, like grated parmesan, chopped greens or ground black pepper.
- Serve warm with desired sides.
