CHICKEN COBBLER

There is nothing cozier or comforting than this chicken cobbler casserole! The casserole is loaded with chicken and veggies in a sauce topped with a delicious biscuit topping. This cobbler comes together so quickly and makes for a great weeknight dinner. This chicken cobbler is a spin off of the classic chicken pot pie, but delicious in its own way!

WHAT YOU NEED-

  • Chicken– This cobbler calls for shredded chicken, you can make your own shredded chicken or just use a rotisserie chicken!
  • Veggies– Frozen or canned veggies can be used! We like to use frozen veggies, the mixed melody style that includes corn, carrots, peas, and green beans.
  • Butter– Adding melted butter to the bottom of the casserole gives the chicken filling for juices. You can use either melted unsalted or salted butter.
  • Flavor– For additional flavor, we season the filling with salt, pepper, garlic, paprika, and Italian seasoning.
  • Biscuit Mix– This recipe calls for the classic Red Lobster Garlic Biscuit Mix. You want to also use the seasoning packet it comes with.
  • Milk– You can use either whole milk or half and half.
  • Cream of Chicken– Be sure to use canned cream of chicken soup. This is what gives you the delicious gravy-like sauce.
  • Broth– We recommend using chicken broth or stock, but you can also just use vegetable or beef broth.

HOW TO MAKE CHICKEN COBBLER

With just a couple steps you can have this cobbler casserole in the oven!

  1. Preheat the oven and add melted butter to a casserole dish. (You can add butter to the dish and allow it to melt but the oven is preheating.)
  2. Add shredded chicken, veggies and seasoning to the casserole dish and mix. Spread out evenly along the dish.
  3. In a measuring cup or bowl, combine the canned cream of chicken and broth. Pour the mixture over the chicken and veggies, leaving ¼ for the top. Do NOT mix!
  4. Whisk together the biscuit mix, milk, and the seasoning packet from the mix. Pour over chicken soup mixture. Do NOT mix!
  5. Drizzle the remaining cream of chicken mix over the biscuit mix. Do NOT mix!
  6. Bake until the biscuit topping is cooked through and golden.
  7. Remove and allow to cool for about 5-10 minutes. Top with chopped greens and serve.

STORING AND REHEATING

Those cobbler casserole is a GREAT leftover dish! This is great in the fridge and freezes so well.

  • Fridge– Once the cobbler is cooled, cover the dish with foil or parchment paper and store in the fridge for up to 4-5 days! Reheat in the microwave until warmed.
  • Freezer– Transfer the cooled cobbler into a freezer safe bag or container and freeze for up to 3 months. To enjoy, allow to thaw overnight and reheat in the oven or microwave.

QUESTIONS YOU MIGHT HAVE-

Can I substitute the shredded chicken?

Yes! You can use shredded turkey! Use up your leftover turkey meat and make this cobbler.

Can I use fresh veggies?

You can use fresh veggies, but we recommend that you boil them first so that they are tender, to avoid undercooked veggies.

Can I substitute the canned cream of chicken?

Yes, you can use canned cream of mushroom soup!

Do I have to use a Red Lobster biscuit mix?

If you cannot find Red Lobster biscuit mix, you can use Bisquick mix instead

Can I add cheese to make this cobbler cheesy?

Make this casserole cheesy by adding shredded cheese over the chicken and veggie layer

Can I make garlic butter biscuit topping?

Don’t mix the topping mix into the biscuit mix, instead combine it with melted butter and brush on top of the biscuits after baking.

Is my biscuit mixture supposed to be lumpy?

After whisking the biscuit mix and milk and it seems like the mixture is still lumpy, no worries!

Can I freeze the cobbler uncooked to make in the future?

Yes! Assemble the cobbler in a freezer safe casserole dish and cover with foil. Freeze for up to 4-5 months! When ready to cook, thaw overnight and bake per instructions.

  • 11.36 oz red lobster cheddar bay biscuit mix 1 box
  • 1 3/4 cups whole milk

Instructions

  • Preheat the oven to 375°F and add melted butter to a 9×13 casserole dish. (You can add butter to the dish and allow it to melt as the oven is preheating.)
  • Add shredded chicken, salt, pepper, italian, and garlic powder to the casserole dish and mix then spread out evenly in the casserole dish.
  • Then add the frozen veggies to the casserole dish and give it a quick toss.
  • In a measuring cup or bowl, combine the canned cream of chicken and broth. Pour the mixture over the chicken and veggies, leaving about ¼ of the mixture for the top. Do NOT mix!
  • Whisk together the biscuit mix, milk, and the seasoning packet from the biscuit box. Pour over chicken soup mixture, covering the entire casserole dish with biscuit mix. Do NOT mix!
  • Drizzle the remaining cream of chicken mix over the biscuit mix. Do NOT mix!
  • Bake at 375°F for 45-55 minutes or until the biscuit topping is cooked through and golden.
  • Remove and allow to cool for about 5-10 minutes. Top with chopped greens and serve.
