GRILLED CHICKEN THIGHS
Your grilling season just got a whole lot better! These tender and juicy yet charred chicken thighs are packed with flavors and so easy to make. The chicken marinade made with oil, mayo, seasonings, and garlic gives you the juiciest, softest chicken! Whether you are making this chicken recipe for dinner, lunch, or as a side, everyone is going to love this dish.
| What type of chicken can I use? This recipe used boneless skinless chicken thighs! You can use any cut of chicken with this grilled chicken marinade. Chicken breast, drumsticks, bone in chicken thighs, chicken wings or even a whole chicken can be used. |
GRILLED CHICKEN MARINADE
The importance of achieving tender and juicy grilled chicken has a lot to do with the chicken marinade! This chicken marinade recipe is so simple and works great no matter the type of chicken you use.
- Oil– For the best results use Olive oil but you can also use canola oil or avocado oil.
- Mayo– The mayo combined with the oil creates the most tender chicken. You want to use regular mayo, light mayo or even avocado oil mayo can be used.
- Garlic– Freshly minced garlic brings so much flavor to the chicken. You can also substitute it with garlic powder.
- Flavors– For the seasoning, the recipe calls for salt, pepper, paprika, and Italian seasoning. You can also any other of your go-to seasonings. We love adding kick’n chicken seasoning or Montreal chicken seasoning.
| MARINATING TIME– You want to marinate the chicken for at least 30 minutes. Marinade in the fridge for up to 2 days! Allow to sit at room temperature for atleast 10 minutes before grilling. |
HOW TO GRILL CHICKEN THIGHS
Trim off the excess fat and rinse the thighs, then pat dry.
- Add the chicken thighs and marinade mixture into a bowl or plastic bag and let marinate in the fridge. (Allow the chicken to sit at room temperature for at least 10 minutes before grilling.)
- When ready to cook, preheat the grill, clean and oil the grates. Add the thighs to the hot grill. Cook until crispy and cooked through.
- Remove from grill and top with chopped greens and lemon juice.
- Serve with desired sides.
| When do I know my chicken is cook? The internal temperature of cooked chicken ready 165°F. If you don’t have a thermometer, cut the chicken in the thickest part and make sure there is no pink. |
OTHER COOKING METHODS-
When craving these juicy grilled thighs but don’t want to get out the grill use another method!
- Sauté– Heat a skillet with 1 Tbsp oil on medium heat. Once hot add the thighs to the skillet and cook for 6-7 minutes. Flip and cook an additional 5-6 minutes or until crispy and cooked through.
- Air Fryer– Add the chicken to the air fryer basket and air fry at 400°F and cook for about 15-20 minutes, until crispy.
- Oven Baked– Preheat oven to 400°F and add chicken thighs to a casserole dish or baking sheet. Bake the chicken for 28-30 minutes or until crispy and golden.

Juicy Grilled Chicken Thighs
Ingredients
- 2 lbs boneless skinless chicken thighs
Grilled chicken marinade-
- 1/3 cup olive oil
- 1/4 cup mayonnaise
- 3 garlic cloves minced
- 2 tsp salt
- ½ tsp ground black pepper
- 1 tsp Italian seasoning
- ½ tsp paprika
Instructions
- In a bowl, combine the olive oil, mayo, garlic, salt, pepper, Italian, and paprika.
- Trim off any excess fat, rinse and pat dry the chicken thighs.
- Add the chicken and marinade to a plastic bag or bowl and mix to combine.
- Marinate in the fridge for up to 2 days.
- Preheat the grill and clean the grill. Once hot, add the chicken thighs.
- Grill for about 15 minutes on medium high heat, flipping halfway through the cooking time. (Internal temperature of cook chicken reads 165F)
- Remove chicken from the grill and allow it to sit for about 2-4 minutes. Top with lemon juice and chopped greens.
- Serve with desired sides.
