CUCUMBER TOMATO SALAD
Salads are always great to have on hand for lunch, sides, or to take for potlucks and events. This crunchy cucumber tomato salad is one you want to have! The fresh tomatoes, cucumbers, and onions combined with the vinaigrette dressing comes together so well. This is the perfect side dish or light lunch salad.
WHAT YOU NEED-
This salad can be thrown together in minutes with just a few simple ingredients!
- Cucumber– For the best results you want to use mini cucumbers, but any fresh cucumber will work.
- Tomato– Cherry tomatoes, Roma tomatoes, Campari tomatoes, or any other type of tomato will work great for this salad.
- Onion–
- Cilantro– The key to this salad is the freshly chopped cilantro in the salad, it brings so much flavor. You can substitute it for parsley, dill or even totally opt out of the greens.
- Oil– You can use either olive oil or sunflower oil for the dressing.
- Vinegar– White vinegar or red wine vinegar will work.
- Flavor– For the seasoning, we used salt and pepper. For a Mediterranean taste you can add some Italian seasoning!
HOW TO MAKE CUCUMBER TOMATO ONION SALAD
This light salad can be ready in 5 minutes!
- Slice the tomatoes, onions and cucumbers and place into a bowl.
- Pour in the oil and vinegar, along with the seasonings. Toss until well combined.
- Top with freshly chopped greens and serve.
| TIP– We recommend this dish to be served fresh to avoid soggy salad. If you want to make it ahead you can cut up all the ingredients beforehand and then combine right before serving. |

Cucumber Tomato Salad
Ingredients
- 3 mini cucumbers sliced
- 3 roma tomatoes sliced
- 1/4 small red onion sliced
- 1 tbsp cilantro chopped
Dressing-
- ½ tsp salt
- ¼ tsp ground black pepper
- ½ tbsp white vinegar
- 1 tbsp oil sunflower or olive
Instructions
- Wash and cut the cucumbers, tomatoes, and red onions.
- Add the vegetables into a bowl and toss in the oil, vinegar, salt, pepper, and chopped cilantro.
- Top with ground black pepper and serve immediately.
