BEST SAUTEED VEGETABLES
This easy dish is the perfect way to get in all your veggies and it is so easy to make! Sauteed vegetables are such a great side. The dish is light, easy and goes with almost anything! Have the veggies ready to enjoy in under 30 minutes.
WHAT YOU NEED-
- Mushrooms– You can use either white button mushrooms, portobello mushrooms, crimini, shitake or any other mushrooms you prefer. You can also opt out of adding mushrooms.
- Carrots– Either sliced carrots or julienned carrots will work.
- Onion– Red onion, sweet onion, or cooking onion can be used for this dish.
- Bell Pepper– Any color of bell peppers can be used! You can use either classic bell peppers or min bell peppers.
- Broccoli– You want to use all equal sized broccoli florets for even cooking! We do not recommend using frozen broccoli.
- Squash– You can use your favorite squash, or even zucchini!
- Garlic– Freshly minced garlic will give you the best results, but you can also use garlic powder.
- Flavor– For the flavor, this recipe calls for just salt and pepper. You can add any of your favorite seasonings to level up the flavors.
HOW TO SAUTE VEGETABLES
- Prep and cut up all the vegetables.
- In a large skillet, cook the halved mushrooms with oil until golden.
- Add the diced onions, pepper, and sliced carrots to the skillet and cook.
- Once the veggies are tender, add in the butter and minced garlic and cook until fragrant. Add in the broccoli florets and sliced squash along with the salt and pepper and cook until veggies are cooked through.
- Top with freshly chopped herbs and serve as desired.

Ingredients
- 1 ½ cup mushrooms white or portobello, halved
- 2 medium carrots sliced
- ½ medium red onion largely diced
- 1 bell pepper color of choice, largely diced
- 1 broccoli head medium florets
- 1 medium yellow squash sliced
- 3 garlic cloves minced
- 2 Tbsp oil
- 1 Tbsp unsalted butter
- ¾ tsp salt
- ½ tsp ground black pepper
- 2 Tbsp chopped herbs optional
Instructions
- In a large skillet, add the halved mushrooms and 1 Tbsp oil and cook on medium heat for 5 minutes, or until golden. Mix occasionally to cook evenly.
- Add the sliced carrots and diced peppers, onion, and 1 Tbsp oil in the skillet. Cook for 5-6 minutes, or until the desired tenderness of the vegetables is reached.
- Make an opening in the middle of the skillet and add the butter and minced garlic and allow the garlic to cook until fragrant.
- Add in the broccoli florets and sliced yellow squash and cook for an additional 3-4 minutes. Season with salt and pepper, or to taste.
- Remove from heat and top with chopped herbs and serve as desired.
