WHAT YOU NEED-

- Baking Soda & Powder– The baking soda and baking powder is what ensures fluffy pancakes, be sure they are fresh!
- Salt– Just a small amount of salt balances the sweetness and enhances all the flavors in the batter.
- Sugar– To sweeten the pancake batter, this recipe calls for granulated sugar. You can adjust the sweetness level of your pancakes based on preference.
- Butter– You want to use cooled melted unsalted butter for this pancake batter. The butter makes the pancakes rich, soft and buttery.
- Milk– Whole milk, 2% milk, or half & half all work well. You can also use buttermilk for extra tang or a dairy-free alternative if needed.

HOW TO MAKE CHOCOLATE CHIP PANCAKES

- Sift together the dry ingredients in a large mixing bowl. Mix in the chocolate chips into the dry ingredients.
- In a separate bowl, whisk together all the wet ingredients. Add the dry ingredients to the wet mixture and mix just enough to combine. Do NOT overmix the batter, it’s okay if there are still some lumps.
- Heat a large skillet or griddle on medium heat. Once hot, grease with a generous amount of butter. Using a 3/4 cup measuring cup or ladle, pour the pancake batter into the pan, into a patty shape. Repeat until the skillet or griddle is full of pancakes, do NOT overcrowd.
- Cook the pancakes on medium heat for 2-3 minutes, once the batter starts to bubble and get defined edges. Flip and cook for another 1-2 minutes.
- Repeat with all the pancake batter, covering the cooked pancakes to keep them warm.
- Serve immediately with desired sides.

QUESTIONS YOU MIGHT HAVE:
I don’t recommend making the pancake batter too far in advance, if it sits too long, the baking powder and soda lose their strength, which will leave you with flat pancakes. However, you can prepare the dry ingredients ahead of time!
There are several reasons why this could happen; overmixed batter, old baking soda and/or baking powder, the pan was too hot.
If you want perfectly round pancakes, you can use a pancake mold or a pancake skillet. You can also use different pancake mold shapes for fun pancakes.
Keep the finished pancakes warm by covering them with foil or placing them in the oven (or toaster oven) set to the “warm” setting while you finish cooking the rest.
Chocolate chip pancakes freeze great! Once the pancakes are cooked and cooled, add to a freezer safe bag or container and freeze for 3-4 months. To enjoy, just thaw overnight and heat the next morning and serve.

Ingredients
- 1 2/3 cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- Pinch salt
- 3 Tbsp granulated sugar
- 1 large egg
- 1 tsp vanilla
- 1 cup whole milk
- 4 Tbsp unsalted butter melted & cooled
- 3/4 cup dark or milk chocolate chips regular or mini
- 2 Tbsp butter for greasing
Instructions
- Sift together flour, baking powder, baking soda, salt, and sugar into a large mixing bowl. Add the chocolate chips and mix again. Set aside.
- In a separate bowl, whisk together the egg, vanilla, milk, and the cooled unsalted butter until combined.
- Pour the wet ingredients into the dry ingredients and whisk just until combined. Do NOT overmix.
- Heat a large skillet or griddle on medium high heat. Once hot, add 1 Tbsp of butter to grease the pan. Using a 1/3 measuring cup, pour the batter into the skillet. (Add some additional chocolate chips on top if desired.)
- Cook for 2-3 minutes, looking for bubbles and firm edges. Flip and cook for another 1-2 minutes.
- Remove and repeat until the chocolate chip pancake batter is gone, you should have about 8 pancakes.
- Serve with desired sides immediately, while still warm and enjoy.
