BISCUITS AND GRAVY RECIPE

This classic Southern style biscuits and gravy recipe is the perfect breakfast! Fluffy biscuits topped with rich and creamy sausage gravy. Start the day with this delicious biscuits and gravy recipe, so easy, satisfying, and great for a weekend brunch or whenever you’re craving something warm and homemade.

WHAT YOU NEED-

  • Biscuits– Use your favorite biscuits, either homemade or store-bought biscuits can be used. For the best results, I recommend that you use my easy homemade biscuits.
  • Ground Sausage– This recipe calls for pork sausage. I like using breakfast or Italian sausage (hot or mild sausage will work great). You can also swap it out for chicken sausage if you prefer a lighter option.
  • Butter– You can use either salted or unsalted butter for the sausage gravy.
  • Flour– All-purpose flour helps thicken the gravy and gives it that classic texture.
  • Milk– Whole milk creates a rich, creamy base for gravy. I don’t recommend substituting other types of milk. Whole milk provides the best flavor and consistency.
  • Flavor– For the seasonings, keep it simple with salt, pepper, garlic, and paprika! The sausage itself provides most of the flavor, so a light hand on extra seasoning is best.
  • Garnish– Finish off your sausage gravy with freshly chopped green onions, chives, or cilantro for a pop of color and freshness.

HOW TO MAKE BISCUITS AND GRAVY

With just a few simple steps, you can have this comforting biscuits and gravy recipe ready to enjoy!

  1. Prepare the Biscuits– Make a fresh batch of biscuits, either from scratch or using premade biscuit dough.
  2. As the biscuits bake, prepare the sausage gravy,
  3. Make the Sausage Gravy– Heat a large skillet on medium high heat, once hot add the ground sausage. Sauté the sausage until cooked through, breaking apart as it cooks.
  4. Add the butter to the sausage and melt. Mix in the flour until incorporated.
  5. Pour in the milk and seasonings and bring to a simmer. Simmer for a couple minutes, until the gravy thickens.
  6. Remove from the heat and top with freshly chopped greens.
  7. Assemble– Add 1-2 biscuits to your plate and top with hot sausage gravy. Top with additional greens, red pepper flakes, and black pepper.
  8. Serve immediately while it is still hot.

QUESTIONS YOU MIGHT HAVE:

Do I cut my biscuits in half before adding the sausage gravy?

You can add sausage gravy over whole biscuits halved, cubed or even crumbled biscuits. It is totally based on preference.

Can I make the sausage gravy spicy?

Yes! You can use hot Italian sausage or add crushed red pepper flakes to the gravy.

How do I thin out the sausage gravy if it is too thick?

If you want your sausage gravy to be thinner, just add some more milk!

Can I make the gravy and biscuits ahead of time?

Yes! You can prepare the biscuits the night before and then just warm them before assembling the biscuits and gravy. The sausage gravy can be prepared 2-3 days ahead of time, just reheat the gravy before adding over the biscuits.

How do I store leftover biscuits and gravy?

I do not recommend that you store the biscuits and gravy together. Store them separately to avoid soggy biscuits and gravy. Store the sausage gravy in the fridge for 3-4 days.

Instructions

Making Homemade Biscuits-

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, baking powder, baking soda, sugar, and salt.
  • Using a large-holed box grater, grate the very cold butter into the dry ingredients. (Coat the stick of butter in flour before grating to avoid slippery butter while grating.) Toss the butter into the dry ingredients to combine.
  • Pour in the buttermilk and mix just until a shaggy dough forms. (Do NOT overmix the dough, you should have a messy dough.)
  • Transfer the dough onto a floured surface and gently knead until combined. (Do not overwork the dough, you do not want smooth dough, it's okay if there are some dry spots, and wet spots.)
  • With your hands or a rolling pin, flatten the dough into a rectangle, about 3/4 inches thick.
  • Fold one side of the rectangle dough into the center, then top with the other side. Turn the dough and roll the dough out again into a 3/4-inch-thick rectangle and repeat the folding again.
  • Do the folding method no more than 2-3 times. Finally, after the last fold, roll out the dough into a rectangle again, 3/4 inches thick.
  • Using a biscuit cutter, press straight down into the dough to cut out round biscuits. Make your cuts close together to get as many biscuits as possible. (Avoid twisting the cutter, spinning it can seal the edges and prevent the layers from rising.)
  • Gather the leftover biscuits dough and gently press it together and pat it out to be ¾ inches thick. Cut out as many additional biscuits as you can.
  • Gently add the biscuits onto the lined baking sheet, spacing them slightly apart. Brush the tops with egg wash or milk. (Brushing them helps them brown up, but this is optional.)
  • Bake at 425°F for 18-20 minutes, until the biscuits are puffed and the tops are golden.
  • *If you are using store-bought premade biscuits, follow the package instructions to bake.
  • While the biscuits are baking prepare the sausage gravy.

Preparing the Sausage Gravy-

  • Heat a large skillet on medium high heat. Add ground sausage to the skillet and sauté for 4-5 minutes, breaking apart as it cooks.
  • Once the sausage is cooked through, add butter and melt. Once melted, mix in flour until well incorporated.
  • Pour in the whole milk, salt, pepper, garlic powder, and paprika and mix. Bring to a simmer on medium heat and allow the sauce to thicken.
  • When the sauce has thickened, remove from the heat and top with freshly chopped greens. (Taste and adjust seasonings if desired.)
  • Assemble Biscuits and Gravy-
  • Once the biscuits are golden, remove from the oven and allow it to cool for about 5 minutes.
  • Add 1-2 biscuits onto your plate and pour some sausage gravy over the biscuits. Top with freshly chopped greens, red pepper flakes(optional), and ground black pepper.
  • Serve immediately with desired sides.
