PARMESAN TRUFFLE FRIES
These flavorful parmesan truffle fries are going to become your new obsession! Crispy fries tossed in black truffle oil, parmesan cheese and greens and served alongside some homemade garlic aioli. A simple and delicious recipe that makes for the perfect snack, side dish or even main dish!
WHAT YOU NEED-
- Potatoes– You want to use russet potatoes or also known as Idaho potatoes. These potatoes are perfect for making fries.
- Oil– For crispy and crunch fries, you want to toss the potatoes in oil before baking! You can use olive oil, canola oil, avocado oil, or even vegetable oil!
- Flavor– To season the French fries, I like to do a blend of salt, pepper, garlic, paprika, and chili powder! You can also use any of your other favorite seasonings to season these oven-baked fries.
- Truffle Oil– The key ingredient in this recipe is black truffle oil! Be sure to use high-quality truffle oil for the best results. I like to use the Black Truffle Oil from Walmart or the Truffle brand works great!
- Cheese– This recipe calls for shredded parmesan cheese! You want to use freshly grated parmesan cheese for the freshest results and flavors.
- Greens– For added flavor, add freshly chopped cilantro or parsley to the mix! Adding greens is totally optional.
HOW TO MAKE TRUFFLE FRIES
Have these flavorful truffle fries ready in no time!
- Preheat the oven and line a baking sheet with parchment paper.
- Wash the potatoes and cut them into even-sized thin strands. Add the fries to a bowl and toss with oil and seasonings.
- Transfer the seasoned fries to the lined baking sheet and spread evenly.
- Bake the fries until crispy, golden and cooked through.
- Once the fries are cooked, carefully transfer them to a bowl and add the truffle oil, shredded parmesan cheese, and chopped greens.
- Toss everything until fully combined and transfer to a serving plate.
- Top with some additional parmesan cheese and chopped greens.
- Serve immediately with garlic aioli or any other desired sauces.
HOW TO MAKE FRENCH FRIES
There are a couple different ways that you can prepare your fries! Use your favorite way to get the ultimate crunchy fries.
- Fry– Add oil to a large pot or deep skillet and allow it to get hot, about 350-375°F. Once the oil is hot add the sliced fries into the oil and fry, do not overcrowd the pot. Allow the French fries to fry for about 4-5 minutes, until they are golden and crispy. Remove and transfer to a paper-towel lined plate. Repeat with all the fries and then toss on truffle oil and parmesan.
- Air Fryer– Air fryer French fries are my favorite, go-to method! Add the seasoned fries to the air fryer basket and air fry at 400°F for 12-15 minutes, or until golden, crispy and tender. (Toss them halfway through the cook time for all around crispiness.)

Yes, if you want to speed up the process you can just use frozen store-bought fries! Just heat them up then continue with the recipe.
This is based on preference! If you prefer the potato skin off when it comes to fries, then you can peel the potatoes.

Easy Parmesan Truffle Fries
Ingredients
French Fries-
- 1 lb russet potatoes
- 1 ½ Tbsp olive oil
- 1 tsp salt
- ½ tsp ground black pepper
- ½ tsp garlic powder
- ½ tsp paprika
- ¼ tsp chili powder
Truffle Topping-
- 2 Tbsp black truffle oil
- 1/4 cup shredded Parmesan cheese
- 2 Tbsp fresh cilantro or parsley finely chopped
Instructions
- Preheat the oven to 425°F and line a large baking sheet with parchment paper.
- Scrub and wash the russet potatoes. (You can peel the potatoes, if desired.)1 lb russet potatoes
- Cut the potatoes into thin, even sized strands no longer than ½-inch in thickness. Transfer all the cut fries into a large bowl.
- Toss the fries with oil and seasonings until fully coated.1 ½ Tbsp olive oil, 1 tsp salt, ½ tsp ground black pepper, ½ tsp garlic powder, ¼ tsp chili powder, ½ tsp paprika
- Transfer the seasoned potatoes to the lined baking sheet and layout flat, so that none are overlapping.
- Bake at 425°F for about 25-30 minutes, or until the fries are golden, crispy and baked through.
- Once the fries are cooked, carefully remove them from the oven and transfer them to a large bowl. Toss with truffle oil, parmesan cheese and greens. (You can also do this with the fries in the baking sheet to avoid extra dishes.)2 Tbsp black truffle oil, 1/4 cup shredded Parmesan cheese, 2 Tbsp fresh cilantro or parsley, finely chopped
- Transfer the hot parmesan truffle fries to a bowl, top with additional parmesan cheese and chopped greens and serve immediately.
