Preheat the oven to 425°F and line a large baking sheet with parchment paper.
Scrub and wash the russet potatoes. (You can peel the potatoes, if desired.)
1 lb russet potatoes
Cut the potatoes into thin, even sized strands no longer than ½-inch in thickness. Transfer all the cut fries into a large bowl.
Toss the fries with oil and seasonings until fully coated.
1 ½ Tbsp olive oil, 1 tsp salt, ½ tsp ground black pepper, ½ tsp garlic powder, ¼ tsp chili powder, ½ tsp paprika
Transfer the seasoned potatoes to the lined baking sheet and layout flat, so that none are overlapping.
Bake at 425°F for about 25-30 minutes, or until the fries are golden, crispy and baked through.
Once the fries are cooked, carefully remove them from the oven and transfer them to a large bowl. Toss with truffle oil, parmesan cheese and greens. (You can also do this with the fries in the baking sheet to avoid extra dishes.)
2 Tbsp black truffle oil, 1/4 cup shredded Parmesan cheese, 2 Tbsp fresh cilantro or parsley, finely chopped
Transfer the hot parmesan truffle fries to a bowl, top with additional parmesan cheese and chopped greens and serve immediately.
