PARMESAN CRUSTED POTATOES

These oven-roasted potatoes with a parmesan crust are so delicious! If you like cheese, especially Parmesan, then this recipe is for you! The seasoned potatoes are oven roasted on a layer of parmesan cheese, creating a crust of parmesan on the potatoes! This recipe makes for a great side dish no matter what the occasion!

WHAT YOU NEED-

  • Potatoes– For this recipe we use mixed baby potatoes! You can also use yellow potatoes, or even regular Yukon gold potatoes.
  • Oil– You can use any of your favorite cooking oils such as olive oil, canola oil, avocado oil, or even vegetable oil.
  • Flavor– The seasoning this recipe calls for salt, pepper, garlic, paprika, and Italian seasoning. You can use your go to seasonings for the potatoes.
  • Parmesan Cheese– For the best results you want to use freshly grated parmesan from your local grocery store. You can also use the pre grated parmesan, but we highly recommend using fresh grated cheese not the store-bought packaged parmesan.
  • Greens– Either freshly chopped green onions, chives or cilantro will work great!

HOW TO MAKE PARMESAN POTATOES

This recipe is such an effortless dish, the entire family is going to LOVE!

  1. Rinse half the baby potatoes and add them into a bowl. Toss with oil and seasoning.
  2. In another bowl, mix the Parmesan cheese mixture.
  3. Drizzle oil on the bottom of a casserole dish and spread out the parmesan cheese mixture evenly. Add the seasoned potatoes flat side down.
  4. Bake until potatoes are cooked through and crispy. Remove from the oven, top with freshly chopped greens and serve with desired sides.

  • Preheat the oven to 400°F.
  • Rinse and pat dry the potatoes. Half the potatoes and add them into a bowl.
  • Toss them with oil, salt, pepper, garlic, Italian, and paprika until the potatoes are fully coated.
  • In another bowl, mix the parmesan cheese, garlic, Italian seasoning, and black pepper.
  • Drizzle 1 Tbsp olive oil on the bottom of the casserole dish. Spread the parmesan mixture evenly over the oil.
  • Add the seasoned potatoes over the parmesan mixture flat side down.
  • Bake at 400°F for 30-35 minutes or until the potatoes are tender enough to run a fork through effortlessly.
  • Remove from the oven, top with freshly grated parmesan, greens, and black peppers.
  • Serve with desired side dishes.
