PUMPKIN WAFFLES
There is nothing better than these delicious pumpkin spice waffles on a crisp fall morning! The homemade pumpkin waffle batter gives you crispy, yet fluffy and light waffles loaded with pumpkin spice flavors. Pair these waffles with some pecans and maple syrup for the ultimate breakfast or brunch!
WHAT YOU NEED-
- Flour– Be sure to use high-quality all-purpose flour! We recommend using Bob’s Red Mill Flour.
- Baking Soda & Powder– Make sure to use fresh baking soda and baking powder! Adding these ingredients helps ensure your waffles are fluffy.
- Spices– You want to add pumpkin pie spice, ground cinnamon and a pinch of salt! Adding these spices will give you more delicious pumpkin spice flavors.
- Pumpkin– Be sure to use canned pumpkin puree, NOT canned pumpkin pie! You can also use fresh pumpkin puree if you prefer.
- Sugar– For this waffle recipe we use brown sugar! Either dark or light brown sugar can be used, we use light brown sugar in this recipe.
- Eggs– Adding eggs helps bind all the ingredients and helps make the waffles fluffy!
- Milk– To help make the waffles rich, you want to add whole milk! You can substitute the whole milk or half and half creamer.
- Vanilla– For added flavors, we add vanilla extract into the waffle batter.
- Butter– Make sure to add melted unsalted butter to the batter. You want to ensure that the melted butter is cool and NOT hot, or it will ruin the batter.
HOW TO MAKE HOMEMADE WAFFLES
These waffles are so effortless to make, and sure to become a favorite with everyone!
- Sift together the dry ingredients in a bowl. Set aside.
- In a bowl, whisk together the pumpkin puree, sugar, eggs, milk, vanilla, and melted butter.
- Mix the dry ingredients with the wet ingredients until well combined.
- Heat the waffle maker and spray with baking spray to avoid sticking.
- Once ready, use a measuring cup and scoop some batter into the center, do not overfill. Once closed the batter will bread and fill the entire mold. (If you overfill, the batter will pour out causing a mess!)
- Cook the waffles following your waffle maker instructions.
- Meanwhile, prepare the waffle toppings.
- Remove the waffles from the waffle maker. Repeat with the desired number of waffles.
- Serve with your choice of toppings.

QUESTIONS YOU MIGHT HAVE-
Yes! You can make your waffles ahead of time and just reheat in the oven or microwave when ready to enjoy! We do NOT recommended making the batter ahead of time, the leaven will lose its strength the longer it sits.
Yes, you need a waffle maker to make waffles! You can use a classic waffle maker, mini waffle maker or even the square shaped waffle maker.
Yes! Once the waffles are cooled, add to a freezer bag and freeze up to 3-4 months! Thaw overnight or reheat to thaw and warm.
This means you have added too much batter! No worries, do NOT open the waffle maker while cooking. Just wipe away the drippage and next waffle add less batter.
All waffler makers will have a light to indicate that the waffles are done! Another tip to know when the waffles are done is when the steam stops coming from the waffle maker.
You can just use ground cinnamon!

Easy Pumpkin Waffle Recipe
Ingredients
- 2 cups all-purpose flour sifted
- 1 ½ tsp baking powder
- 1 tsp baking soda
- pinch of salt
- ½ tsp ground cinnamon
- 1 ½ tsp pumpkin pie spice
- 3/4 cup pumpkin puree
- 1/2 cup brown sugar
- 2 large eggs
- 1 1/2 cup whole milk
- 1 tsp vanilla extract
- 3 Tbsp unsalted butter melted
Instructions
- Sift together the flour, baking powder, baking soda, salt, cinnamon and pumpkin pie spice in a bowl. Set aside.
- In a separate bowl, whisk together the pumpkin puree, brown sugar, eggs, milk, vanilla, and melted butter.
- Mix the dry ingredients with the wet ingredients until well combined.
- Heat the waffle maker and spray with baking spray to avoid sticking.
- Once ready, use a 1/3 cup measuring cup and scoop some batter into the center of the waffle maker. Once closed the batter will spread and fill the entire mold. (If you overfill, the batter will pour out causing a mess!)
- Cook the waffles for about 5-6 minutes or until crispy and golden. Follow your waffle maker instructions for proper cook time, do NOT open the waffle maker before waffles are cooked through.
- Meanwhile, prepare the waffle toppings.
- Remove the waffles from the waffle maker. Repeat with the desired number of waffles.
- Serve with your choice of toppings.
