PUMPKIN RICE KRISPIE TREATS

Once you try this delicious pumpkin rice Krispie treat recipe you will stop buying rice Krispie treats! The treats are crispy, gooey and sweet, the perfect effortless dessert recipe. These are great to make for the kids, for all your fall parties or even just for a sweet treat during the week.

WHAT YOU NEED-

  • Butter– You can use salted or unsalted butter for this dessert.
  • Marshmallows– Mini or classic marshmallows can be used. For easier melting, we recommend that you use mini marshmallows.
  • Vanilla– Adding vanilla extract to this recipe elevates the flavors, what’s a dessert without vanilla?!
  • Rice Krispie Cereal– For the best results you want to use Kellogg’s Rice Krispies cereal. But you can use any off-brand cereal also.
  • Pumpkin Pie Spice– Adding pumpkin pie spice to these Krispie treats totally elevates the pumpkin flavors! You do not want to skip this step!

HOW TO MAKE RICE KRISPIE TREATS

This delicious dessert comes together so quickly and makes for the ultimate sweet treat!

  1. Line a 9×9 baking sheet with parchment paper and spray with baking spray.
  2. In a large pot, melt butter on medium heat. Once melted add in the vanilla and pumpkin puree mix to combine. Then add in the marshmallows and reduce the heat to medium low heat.
  3. Melt the marshmallows, continuously stirring until all the marshmallows have melted. Be sure to remove the pot from the heat as soon as the marshmallows melt!
  4. Once melted, remove from the heat and add in the cereal and pumpkin pie spice. Mix until well combined.
  5. Add the mixture to the lined baking sheet and push down into an even layer.
  6. Allow to cool in the fridge or room temp until the treat has cooled and hardened.
  7. Slice into even sized squares and serve.

STORING & MAKING AHEAD

You are totally making these ahead of time! Make these on Sunday and enjoy them all week long! These are great to pack with your lunches. Once the rice Krispies are cooled and cut, store in an airtight container or plastic bag.

  • Room Temp– The treats can last at room temperature for up to 3-4 days!
  • Fridge– These can last in the fridge for up to 4-5 days!
STORING TIP– Make sure to cover these when storing or they will dry out and be stale!

RICE KRISPIE TREAT VARIATIONS

You can totally switch out the pumpkin flavors and make different flavors or rice Krispie treats!

  • Extra Pumpkin– Add 1/4 cup pumpkin puree to the marshmallows for additional pumpkin flavors.
  • Plain– Leave out the pumpkin puree and pumpkin spice and make gooey plain rice Krispie treats!
  • Cinnamon Churro– Switch out the pumpkin spice seasoning and puree for 1/4 cup cinnamon sugar for the delicious churro flavored rice Krispie treat.
  • Fruity Pebbles– Remove the pumpkin puree and pumpkin pie spice. Use fruity pebbles instead of rice Krispie cereal for a fun different flavor!
  • Peanut Butter– Instead of pumpkin puree, add a couple scoops of peanut butter!
  • Chocolate– Use cocoa rice Krispie cereal!
