This homemade cookie ice cream sandwich recipe will become your go-to summer dessert! Rich and creamy vanilla ice cream sandwiched in between two homemade chewy chocolate chip cookies.

Stop buying the pre-package Chipwich ice cream sandwich and make this homemade version instead! The cookies are made from our tried-and-true homemade recipe, giving you the best gooey cookies. With your choice of ice cream to add to the middle, this dessert will be a family favorite.

WHAT YOU NEED-

  • Cookie Dough– You can use either homemade cookie dough or store-bought dough. Our homemade chocolate chip cookie recipe works GREAT for this sandwich!
  • Ice Cream– For the sandwich filling, you can use your favorite vanilla ice cream brand! This recipe used vanilla bean ice cream.
  • Additives– For the sides of the ice cream, you can either leave plain or dip in sprinkles, mini chocolate chips or even crushed cookies!

HOW TO BAKE CHOCOLATE CHIP COOKIES

  1. Preheat the oven and line a baking sheets with parchment paper.
  2. Scoop about 2-3 tbsp of cookie dough and shape into round balls.
  3. Add the shaped dough balls to the baking sheet leaving around 1.5 inches apart from each cookie.
  4. Bake until slightly golden and remove. Allow the cookies to FULLY cool.
  1. Once the cookies are fully cooled, match up the cookies by two.
  2. Turn the cookie upside down and add ice cream onto the cookie. Top with the matched cookie and push down to secure the sandwich.
  3. Add sprinkles or mini chocolate chips to a plate and roll the assembled cookie in the chips allowing them to stick to the ice cream.
  4. Repeat with all the cookies. Add sandwiches to a plate and freeze for about 10-20 minutes.
  5. Serve or store.
SCOOPING ICE CREAM– For the easiest way, buy the pint sized ice cream and slice to get perfect shaped ice cream to fit in between the cookies. You can also use an ice cream sandwich scooper to scoop out perfect shaped ice cream.

STORING

Once the ice cream cookie sandwiches are assembled you want to make sure you properly store them to avoid them getting freezer burnt.

  • While you are assembling the sandwiches, be sure to store the assembled ones in the freezer.
  • Once all cookie sandwiches are assembled, wrap each cookie sandwich with plastic wrap. Add them all to a freezer safe plastic bag or container.
  • Freeze for at least 2-3 hours and they can be stored for up to 3 months in the freezer.
When ready to enjoy, just take out a sandwich, unwrap and enjoy!

SANDWICH VARIATIONS

There are so many different variations of this sandwich that you can make! Have fun with this recipe and try different variations.

  • Birthday Cake– Use sugar cookie dough instead and make a birthday cake flavored ice cream sandwich with sprinkles and vanilla ice cream!
  • Oreo– Add crushed Oreos to the chocolate chip cookie batter and add crushed Oreo on the sides of ice cream once assembled.

  • Chocolate– Make chocolate cookies and use those as your cookie base.
  • Peanut Butter– Add a couple scoops of peanut butter to your cookie batter or use peanut butter ice cream.
  • M&M Cookies– Add M&M’s to your cookie batter, for a fun M&M cookie sandwich!

Instructions

Bake Chocolate Chip Cookies-

  • Sift together the flour, baking soda, baking powder and salt in a bowl. Set aside.
  • In another bowl, mix the cooled melted butter, brown sugar, granulated sugar, vanilla, and eggs.
  • Gently mix in the dry ingredients until well combined. Fold in the chocolate chips.
  • Using a scooper, take about 3-4 heaping tablespoons of the batter and form cookie dough ball. Repeat with all the batter.
  • Add the cookie dough balls to a lined baking sheet and chill in the fridge for atleast 30 minutes. (You can shape the batter then shape if you prefer.)
  • Preheat the oven to 350℉. Lay out the cookie balls onto the line baking sheets 1-2 inches apart from each other, do not overcrowd.
  • Bake at 350℉ for 12-14 minutes until slightly turning golden and remove. Allow the cookies to fully cool.

Assemble Ice Cream Cookie Sandwich-

  • Once the cookies are full cooled, flip the cookie and add about 2-3 scoops of ice cream to the cookie. Top with another cookie and push down to close. Repeat with the desired amount of sandwiches you want.
  • Freeze for atleast 3 hours before serving.

Storing-

  • Once all cookie sandwiches are assembled, wrap each cookie sandwich with plastic wrap.
  • Add them all to a freezer safe plastic bag or container.
  • Freeze for up to 3 months in the freezer.
