PIZOOKIE RECIPE
A pizookie is derived from the word pizza and cookie! It is a classic dessert that you get at BJ’s Brewhouse. The cookie batter is soft and chewy and loaded with chocolate chunks! This skillet cookie is a great idea for game nights, date nights, when hosting or even just to enjoy with the family on a weeknight.
WHAT YOU NEED-
- Flour– You want to make sure you use a good quality all-purpose flour!
- Baking Soda & Powder– You want to make sure you use fresh baking powder and baking soda to make sure the cookies rise properly.
- Salt– When you add flakey salt to this cookie batter, it totally elevates the cookies!
- Butter– You want to ensure that you are using melted butter that is already cooled. If you use hot melted butter, your cookie dough will ruin.
- Sugar– This recipe calls for both granulated sugar and light brown sugar. The granulated sugar gives the cookies sweetness, and the brown sugar adds flavor and gives the cookies moisture.
- Egg– Adding eggs is what binds together the cookie batter!
- Vanilla– Adding vanilla extract to the batter elevates the flavors!
- Chocolate– You can use your go to chocolate; mini morsels, regular morsels, chocolate chunks, or even chopped chocolate. The type of chocolate that can be used: milk chocolate, semi-sweet chocolate, or dark chocolate.
HOW TO MAKE A SKILLET COOKIE
This homemade cookie skillet recipe comes together so quickly and will become a favorite!
- In a bowl, sift together the dry ingredients.
- Mix chilled melted butter, sugars, eggs, and vanilla. Add in the dry ingredients and mix until combined.
- Add in the chocolate chips and mix.
- Preheat the oven and prep the 12-inch cast iron skillet.
- Add the cookie dough to the skillet, spread it evenly along the entire skillet.
- Bake until slightly golden. Remove from heat and allow to cool for about 5 minutes.
- Serve warm with desired toppings.
REHEATING & STORING
This recipe is a great make ahead dessert! You can either make ahead and bake when ready to serve or bake and reheat when ready to serve.
- Make Ahead– Prepare the cookie batter and store in the fridge for at least 3-4 days! When ready to bake, continue with instructions.
- Reheat– After the cookie skillet is baked and completely cooled. Store in the fridge covered for 3-4 days. When ready to enjoy, pop in the microwave or oven to reheat.
MINI PIZOOKIES
You can make delicious mini pizookies! These are great when having a girls’ night or you can have mini ones with the family for a fun evening.
- Prepare the cookie dough according to instructions.
- Preheat the oven and line the pans with baking spray or spread with some butter and add cookie batter to 4 mini skillets, dividing evenly.
- Bake until slightly golden. Remove from heat and chill for 5 minutes.
- Serve with desired toppings.
| You can use either mini cast iron skillets or mini baking pans. The cooking time will vary depending on the amount of cookie dough you will add into the mini skillets. Once the cookie dough is slightly golden, you want to remove it from the oven to avoid overbaking! |
PIZOOKIE FLAVORS
We love making our skillet cookies with different flavors! Make mini pizookies, making each a different flavor, so FUN!
- Peanut Butter– Add chopped Reese’s candy to the batter and a couple scoops of peanut butter.
- S’mores– Use our S’mores cookie batter for a delicious S’mores Pizookie! So delicious and perfect for summer evenings!
- Oreos– Add crushed Oreos to the cookie dough for an Oreo flavored Skillet cookie.
- M&Ms– Use classic M&Ms along with some chocolate chips!
- Caramel-Add caramel candies in the cookie skillet and top with caramel drizzle.
- Nutty– Load the skillet cookie with chopped nuts such as pecans, walnuts, or even hazelnuts.

Pizookie Recipe (Skillet Cookie)
Ingredients
- 2 2/3 cup all-purpose flour sifted
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter melted & cooled (2 sticks)
- 2/3 cup light brown sugar
- 2/3 cup granulated sugar
- 1 ½ tsp vanilla extract
- 2 large eggs
- 2 cups chocolate chip morsels
Instructions
- Sift together the flour, baking soda, baking powder and salt in a bowl. Set aside.
- In another bowl, whisk the cooled melted butter, brown sugar, granulated sugar, vanilla, and eggs.
- Once combined, add in the dry ingredients and mix to combine.
- Add in the chocolate chip morsels and combine.
- Preheat the oven to 350℉ and pray a 12-inch cast iron skillet with baking spray.
- Add the cookie batter into the cast iron skillet, spreading evenly.
- Bake at 350℉ for 24-26 minutes, until slightly golden. (Do not overbake or the cookie will be hard)
- Remove from oven and allow to sit for about 5 minutes. Serve with ice cream or desired sides.
