Sift together the flour, baking soda, baking powder and salt in a bowl. Set aside.
In another bowl, mix the cooled melted butter, brown sugar, granulated sugar, vanilla, and eggs.
Gently mix in the dry ingredients until well combined. Fold in the chocolate chips.
Using a scooper, take about 3-4 heaping tablespoons of the batter and form cookie dough ball. Repeat with all the batter.
Add the cookie dough balls to a lined baking sheet and chill in the fridge for atleast 30 minutes. (You can shape the batter then shape if you prefer.)
Preheat the oven to 350℉. Lay out the cookie balls onto the line baking sheets 1-2 inches apart from each other, do not overcrowd.
Bake at 350℉ for 12-14 minutes until slightly turning golden and remove. Allow the cookies to fully cool.
Assemble Ice Cream Cookie Sandwich-
Once the cookies are full cooled, flip the cookie and add about 2-3 scoops of ice cream to the cookie. Top with another cookie and push down to close. Repeat with the desired amount of sandwiches you want.
Freeze for atleast 3 hours before serving.
Storing-
Once all cookie sandwiches are assembled, wrap each cookie sandwich with plastic wrap.
Add them all to a freezer safe plastic bag or container.
