SALMON SHEET PAN DINNER

I love making sheet pan dinners during the busy weeknights! This salmon sheet pan dinner is light, hearty and packed with protein. Potatoes and asparagus paired with flakey and tender salmon fillets marinated in a Dijon mustard marinade. Everything roasts together giving you the ultimate, simple dinner that is fancy and delicious.

WHAT YOU NEED-

  • Salmon– You want to use fresh salmon fillet for this recipe. If you are using frozen salmon fillets, be sure to thaw before cooking this dinner. Using skinless or skin-on salmon is based on preference.
  • Salmon Marinade– The key to this delicious sheet pan dinner is the Dijon marinated salmon! For the marinade, the recipe calls for olive oil, Dijon mustard, salt, pepper, paprika, Italian seasoning and garlic powder.
  • Potatoes– For the best results, you want to use baby gold potatoes, baby red potatoes, or a mix of both baby potatoes! You can also use regular gold, red or russet potatoes, just be sure to cube into small even sized pieces.
  • Oil– Drizzle the potatoes and asparagus in olive oil to get crispy and delicious veggies. You can also use canola oil or vegetable oil.
  • Seasonings– Season the potatoes with salt, pepper, garlic powder, paprika and Italian seasoning. You can also use any of your other favorite seasonings!
  • Asparagus– This recipe calls for fresh asparagus! You can swap for brussels sprouts, broccoli, or broccolini.
  • Lemon– Adding a few fresh lemon slices around the salmon when baking adds a kick of citrus flavors! Such a delicious addition, but not a must!
  • Greens– Topping this sheet pan dinner with freshly chopped cilantro, parsley, or dill once baked adds so many flavors! This is optional.

HOW TO MAKE SALMON SHEET PAN DINNER

With just a few simple steps you can have this delicious salmon dinner ready to enjoy in no time!

  1. Preheat the oven and line a large baking sheet with parchment paper.
  2. Toss the halved potatoes in oil and seasonings and add to the baking sheet.
  3. Bake for about 25 minutes, giving them a head start. (You want to bake them first before adding everything else, since potatoes take longer to cook.)
  4. Meanwhile, prepare the Dijon marinade and toss the fillets in the marinade, coating the fillets fully. (You can marinate the salmon fillets up to 2-3 days ahead of time in the fridge.)
  5. Trim the ends of the asparagus and toss in oil, salt and pepper.
  6. Once the bake time is completed, carefully remove the sheet pan from the oven, move the potatoes to the sides. Then add asparagus next to the potatoes, on both sides.
  7. Add the marinated salmon fillets in the middle of the sheet pan. Add lemon slices around the salmon.
  8. Bake until the salmon, asparagus and potatoes are cooked through. (The internal temperature of cooked salmon is 145°F.)
  9. Top the sheet pan dinner with freshly chopped herbs and serve immediately.

No, you can totally skip the potatoes in this dish! You can just load the sheet pan with salmon and veggie and roast. Then serve with cilantro lime rice, baked potatoes, or mashed potatoes!

The salmon can be marinated up to 2-3 days ahead of time in the fridge! (Watch out for the freshness of the salmon.)

  • Preheat the oven to 400°F and line a large 13×18 baking sheet with parchment paper.
  • Add the halved baby potatoes onto the baking sheet and drizzle with oil and the seasonings. Toss until potatoes are fully coated. (You can use a bowl to season the potatoes, then transfer to the baking sheet.)
    1 1/2 lbs baby red or gold potatoes, halved, 1 ½ Tbsp olive oil, 1 tsp salt, 1 tsp garlic powder, ½ tsp ground black pepper, ½ tsp paprika, ½ tsp Italian seasoning
  • Bake at 400°F for 25 minutes, until potatoes start to become tender.
  • Meanwhile, add the oil, Dijon mustard, salt, garlic powder, paprika, ground black pepper, and Italian seasonings to a bowl and mix to combine. Add the salmon fillets to the mixture and toss to combine and fully coat the fillets. (You can marinate the salmon up to 2-3 days in advance in the fridge.)
    3 Tbsp olive oil, 2 Tbsp Dijon mustard, 1 tsp salt, ½ tsp garlic powder, ½ tsp paprika, ½ tsp ground black pepper, ½ tsp Italian seasoning, 4 salmon fillets, about 1½ lbs
  • Trim about 1/2-1 inches off the ends of the asparagus and toss with oil, salt, and peppers.
    1/2 lb fresh asparagus, 1 Tbsp oil, ¼ tsp salt, ¼ tsp ground black pepper
  • Once the potatoes have cooked for 25 minutes, remove the sheet pan from the oven.
  • Move the potatoes to the edges of the sheet then add the seasoned asparagus next to the potatoes on both sides.
  • Add the salmon fillets in the center of the sheet pan, along with 3-4 lemon slices around the salmon.

  • Bake at 400°F for an additional 10-12 minutes, until everything is cooked through. (The internal temperature of cooked salmon is 145°F)
  • Remove from the oven and top with freshly chopped herbs and serve immediately.
