Preheat the oven to 400°F.
Rinse and pat dry the potatoes. Half the potatoes and add them into a bowl.
Toss them with oil, salt, pepper, garlic, Italian, and paprika until the potatoes are fully coated.
In another bowl, mix the parmesan cheese, garlic, Italian seasoning, and black pepper.
Drizzle 1 Tbsp olive oil on the bottom of the casserole dish. Spread the parmesan mixture evenly over the oil.
Add the seasoned potatoes over the parmesan mixture flat side down.
Bake at 400°F for 30-35 minutes or until the potatoes are tender enough to run a fork through effortlessly.
Remove from the oven, top with freshly grated parmesan, greens, and black peppers.
Serve with desired side dishes.
