MEXICAN STREET CORN DIP
Loaded with bold, smokey and creamy flavors, this easy Elote corn dip is the perfect appetizer! This creamy corn is a spin off of the classic street corn that is a popular and viral Mexican savory treat. Crunchy corn, jalapenos, and Cojita cheese tossed in a delicious, bold, and spicy creamy mixture, giving you bold flavors in every bite! This corn dip is perfect whether you are hosting or just craving a snack.
WHAT YOU NEED-
- Corn– Either fresh corn or canned corn can be used. I like to use canned white and yellow corn for this dip.
- Onion– For the best results, you want to use finely chopped red onion. If you don’t like onions, you can leave the onion out.
- Cheese– To achieve all the right Mexican street corn flavors, you want to use cotija cheese which is a crumbled Mexican cheese. You can swap Mexican cheese for Feta cheese!
- Cilantro– Freshly chopped cilantro brings so much additional flavor to this recipe! If you are not a cilantro fan, you can leave it out.
- Sour Cream– For the creamy mixture, you may want to use regular or light sour cream. You can also use Mexican crema instead, just add less lime since the crema is thinner than sour cream. For a light version you can totally swap the sour cream for plain Greek yogurt.
- Mayo– Adding mayo to the sour cream gives extra creamy flavors.
- Lime– To add a tangy flavor to this dip, use freshly squeezed lime juice!
- Garlic– Freshly minced garlic is always a great idea! This adds additional bold flavors.
- Flavors– To season this dip, you want to use salt, pepper, paprika and chili powder! This will give you all the right smokey and bold flavors.
HOW TO MAKE STREET CORN DIP
This fresh corn dip comes together so quickly, the perfect appetizer, snack or side dish!
- Drain the canned corn and add the corn to a large bowl along with the onions, and cilantro. Toss until well combined.
- Add the rest of the ingredients for the corn dip and mix gently until combined.
- Top with additional cilantro and chili powder.
- Serve immediately as desired.

Fresh Mexican Street Corn Dip
Ingredients
- 30.5 oz canned sweet corn 2 cans
- 1/2 cup red onion finely chopped
- 1 cup Mexican cojita cheese
- 1/3 cup fresh cilantro finely chopped
Dressing-
- 1/3 cup sour cream
- 3 Tbsp mayo
- 3 Tbsp lime juice
- 2 garlic cloves minced
- ½ tsp salt
- ½ tsp paprika
- ½ tsp chili powder
- ¼ tsp ground black pepper
Instructions
- In a large bowl, mix the corn, chopped red onion, cilantro, sour cream, mayo, lime juice, minced garlic, salt, pepper, chili pepper, and paprika until well combined.

- Top with additional chopped cilantro and crumbled cheese.
