FLUFFY PANCAKE RECIPE

What is better than waking up to a warm stack of fluffy pancakes from scratch?! This fluffy pancake recipe gives you a batter that is so easy to work with and gives you delicious golden pancakes. These are perfect for a simple morning, weekends, or even for a brunch party, they are going to be loved by everyone!

WHAT YOU NEED-

  • Flour– Be sure to use good quality all-purpose flour. Be sure to measure correctly, using the spoon and level method.
  • Baking Powder & Soda– The key to achieving light and fluffy pancakes is using fresh baking powder and baking soda!
  • Salt– A pinch of salt in the pancake mix elevates the flavors in this homemade pancake batter!
  • Sugar– To sweeten the pancakes use granulated sugar in the batter.
  • Butter– Melted cooled unsalted butter helps you give buttery, soft pancakes. Do not use hot melted butter, allow it to cool after melting.
  • Milk– You want to use either whole milk, 2% milk or even half & half creamer for this recipe. You can even swap it out for buttermilk or dairy free milk.
  • Vanilla– Vanilla extract adds additional flavors, so good! Vanilla extract can totally be left out if you prefer.
  • Egg– The egg helps bind the ingredients together and adds extra texture and flavor.

HOW TO MAKE HOMEMADE PANCAKES

In just a few minutes, this homemade pancake batter can be ready to be cooked and enjoyed!

  1. Sift together the dry ingredients into a large mixing bowl.
  2. In a separate bowl, whisk together cooled melted butter, milk, vanilla, and egg until combined.
  3. Add the wet mixture to the dry ingredients and whisk to combine. Do NOT overmix, it’s okay if there are still lumps.
  4. Heat a skillet or griddle on medium heat. Once hot, grease with butter. Using a 1/4 measuring cup or ladle, pour the pancake batter into the pan. Repeat to fill the skillet or griddle, do NOT overcrowd.
  5. Cook the pancakes on medium heat for 2-3 minutes, look out for the batter to start to bubble and define edges. Flip and cook for another 1-2 minutes.
  6. Repeat with the rest of the batter, covering the cooked pancakes to keep warm.
  7. Serve with desired sides and serve immediately.
Effortless Tip– Be sure to keep the heat at medium heat, if you cook them too high the outside will brown and cook, but the inside of the cakes will still be raw.

WHEN TO FLIP PANCAKES-

The key to the perfect pancake is perfect golden pancakes that are only flipped once! You want to make sure you flip them at the right time for the pancake to fully cook through! Here are some things you want to look out for that will tell you it’s time to flip your cakes:

  • Bubbles– The top of the pancakes will begin to form bubbles that pop, creating holes will be a large indicator that the pancakes are ready to flip!
  • Defined Edges– As the pancakes start to cook through the edges will become firm and defined. This is another great indication that it is time to flip.
  • Golden– The bottom side of the pancake will be a beautiful golden color!

When you flip the pancakes you don’t need to add anymore butter or oil, but if you want extra buttery and crispy pancakes, add some extra grease to the pan when you flip the pancakes.

PANCAKE VARIATIONS & MIX-INS

These delicious pancakes from scratch are so delectable just as, but also amazing with added mix-ins! Add these mix-ins to the pancake batter before cooking for extra flavors:

  • Berries
  • Chocolate chips
  • Ground cinnamon
  • Bananas
  • Pumpkin pie spice
  • Sprinkles
  • Chopped nuts
  • Lemon juice & zest
  • Nutella
  • Peanut butter
How Much to Add– Keep in mind that adding too much of an add in can ruin the measurements for these fluffy pancakes. When adding wet batter like mashed bananas, Nutella, or peanut butter, don’t add more than ½ cup.

QUESTION YOU MIGHT HAVE:

What is the spoon and level method for measuring flour?

The spoon and level method involves spooning flour into a measuring cup, rather than scooping it directly, to avoid packing. Then, level the flour for an accurate measurement.

What do I use to grease my skillet?

You can use either butter, oil or baking spray. I find that butter gives the best results, golden and crispy pancakes.

Can I make the batter ahead of time?

You do not want to allow the mixed pancake batter to be made too early in advance because the longer it sits, the weaker the baking powder and soda will get, resulting in flat pancakes. You can totally whisk together the dry ingredients ahead of time though!

Why are my pancakes not rising?

There are several causes of flat pancakes. You could have overmixed the batter, used old baking powder and baking soda, or the pan was too hot.

How do I get perfect round pancakes?

You can use a mold or a pancake skillet to achieve the perfect shaped pancakes!

How do I keep the pancakes warm as I cook the rest of them?

Keep the cooked pancakes covered with foil or in the oven or toaster oven, on warm mode, as the rest of the pancakes are cooking.

Can I freeze pancakes?

Yes, leftover pancakes freeze great! Once cooled, transfer to a freeze safe bag and freeze for up to 4 months! To enjoy, just thaw overnight and heat the next morning and serve.

Can I make waffles out of this pancake batter?

Yes, you can use this pancake batter as a waffle batter!
