CROISSANT BREAKFAST SANDWICH
This croissant sandwich recipe is a great breakfast sandwich recipe. The combination of flavors from the flaky croissant and the meat, egg, and cheese is truly delicious! This easy sandwich recipe is the perfect make-ahead sandwich for breakfast or brunch. From the flakey and buttery croissant combined with the warmed egg, meat, and cheese the flavors are truly magical.
WHAT YOU NEED-
- Croissants– Store-bought or homemade croissants can be used! This recipe used regular to large croissants. You can also use small croissants, just adjust all the ingredients. The croissant can also be switched out for a bagel or even an English muffin.
- Meat– For the meat, you can use any of your favorite breakfast meats! Turkey, ham, bacon, turkey bacon, or even sausage patties. We love to pair different meats for a hearty sandwich.
- Cheese– You can use your favorite sliced cheese! We love using Swiss, Colby jack, monetary jack, American cheese, and even cheddar cheese.
- Eggs– Either classic fried eggs or scrambled eggs can be used for this breakfast sandwich! You can also use just egg whites also.
- Spread– Adding sauces and spreads to your sandwiches totally elevates the sandwich! You can use honey mustard sauce, ketchup, mayo, and even Chick-fil-a sauce.
HOW TO MAKE CROISSANT SANDWICHES
You can have these delicious melty croissant sandwiches ready in no time!
- Prepare the bacon using desired cooking method. Check out our 4 methods for getting perfect bacon every time!
- Preheat the oven and prepare baking sheet.
- Prepare the scrambled eggs and then assemble the croissants. Butter the tops of the closed sandwiches.
- Bake until the cheese has melted and sandwiches are crispy and warmed.
- Remove and top with freshly chopped greens and serve with desired sides.

MAKE AHEAD
These croissant sandwiches make for a great make-ahead breakfast! Whether you are throwing a brunch party, want to prepare for the week or freeze, these sandwiches are perfect.
BRUNCH
If you are planning a brunch party, these sandwiches are going to wow everyone!
- Assemble the sandwiches the night before and store in the fridge until ready enjoy.
- Cook either in the oven or the air fryer until the croissants are golden crispy and the cheese has melted and sandwich is warmed.
MEAL PREP
You can also meal prep this recipe, the sandwiches make for a great on the go breakfast!
- Prepare the sandwiches once the bacon and eggs have cooled.
- Wrap in plastic wrap and store in the fridge for 4-5 days.
- Reheating– When ready to enjoy, throw in the air fryer, toaster oven, oven, or microwave until warmed.
FREEZING
These sandwiches freeze GREAT! Just be sure to securely wrap and bag to avoid that freezer burn taste.
- Assemble the sandwiches, once the bacon and eggs are cooled.
- Wrap each sandwich in plastic wrap and then place them all in a freezer bag. Freeze for up to 2-3 months.
- Reheating– Remove from wrapping and heat in the microwave, air fryer or oven until defrosted and reheated!
Breakfast Croissant Sandwich
Ingredients
- 4 large croissants
- 4 slices colby jack cheese halved
- 4 slices deli meat ham or turkey
- 4 slices bacon cooked & halved
- 1 ½ Tbsp mayonnaise
- 2 tsp oil
egg mixture-
- 4 large eggs
- 2 Tbsp whole milk
- ¼ tsp salt or to taste
- ¼ tsp ground black pepper or to taste
- chopped Green onion or chives optional
butter topping-
- 1 Tbsp unsalted butter melted
- ½ tsp garlic powder
Instructions
- Preheat the oven to 375°F.
- In a bowl, whisk together the eggs, milk, salt, pepper, and chopped greens until fluffy.
- Heat a skillet with 2 tsp oil, once hot add the scrambled eggs mixture and cook until fluffy and solid. Mix continuously to avoid burning.
- In a small bowl, combine the melted butter and garlic powder.
- Cut the croissants in half and spread mayo and any other desired sauce on both sides of each croissant. Lay out on a baking sheet.
- Start assembling the sandwich by folding the ham and adding it to the croissant and topping it with a slice of cheese.
- Divide the scrambled eggs into 4 equal parts. Add the eggs on top of the ham and cheese.
- Top with bacon and finish with the other half of the cheese slice. Close the sandwich with the other half of the croissant.
- Repeat with all 4 croissant sandwiches. Using a pastry brush, brush the tops of the croissants with the butter mixture.
- Bake at 375°F for 8-10 minutes, or until the sandwich is warmed through and cheese has melted.
- Serve immediately with desired sauces and sides.
