This croissant breakfast sandwich recipe is the best way to start your day! Buttery, flakey croissants filled with fluffy scrambled eggs, meat, and melted cheese.

CROISSANT BREAKFAST SANDWICH

Nothing beats a breakfast croissant sandwich! The combination of flavors from the flaky croissant and the meat, egg, and cheese is truly delicious! This easy sandwich recipe is the perfect make-ahead sandwich for breakfast or brunch. From the flakey and buttery croissant combined with the warmed egg, meat, and cheese the flavors are truly magical.

WHAT YOU NEED-

  • Croissants– You can use either large or small croissants, but the measurements for this recipe for large croissants. If you use small croissants, you will end up having 1-2 additional sandwiches.
  • Meat– Use any of your favorite breakfast meats such as turkey, ham, bacon, turkey bacon, or even sausage patties. I love to pair different meats for a heartier sandwich.
  • Cheese– You can use your favorite sliced cheese! I love using Swiss, Colby jack, monetary jack, American cheese, and even cheddar cheese.
  • Eggs– Either classic fried eggs or scrambled eggs can be used for this breakfast sandwich! You can also use just egg whites also.
  • Butter Topping– For the topping, the recipe calls for melted butter (salted or unsalted) and garlic powder. This gives the sandwiches added flavor and crisp. The butter topping is totally optional.
  • Spread– Adding sauces and spreads to your sandwiches totally elevates the sandwich! You can use honey mustard sauce, ketchup, mayo, and even Chick-fil-a sauce.

HOW TO MAKE CROISSANT SANDWICHES

You can have these delicious melty croissant sandwiches ready in no time!

  1. Preheat the oven and line a baking sheet with parchment paper.
  2. Whisk the egg mixture, then scramble in a skillet, stirring until fluffy and set.
  3. Prepare the garlic butter in a small bowl.
  4. Slice the croissants in half and spread mayo and any other desired sauce on the insides of the croissants.
  5. Layer ham, scrambled eggs, cheese and bacon, then close the croissants. (Be sure to divide everything evenly among all the sandwiches.)
  6. Add the assembled croissant sandwiches to the lined baking sheet and brush the tops with the garlic butter.
  7. Bake until the croissants are lightly golden and the inside of the sandwiches are warmed through and the cheese has melted.
  8. Serve immediately with desired sides.

MAKE AHEAD

These croissant sandwiches make for a great make-ahead breakfast! Whether you are throwing a brunch party, want to prepare for the week or freeze, these sandwiches are the perfect option!

BRUNCH

If you are planning a brunch party, these sandwiches are going to wow everyone!

  1. Assemble the sandwiches the night before and store them in the fridge.
  2. Remove the croissants from the fridge and let rest as you preheat the oven.
  3. Cook the croissant sandwiches per instructions. You might have to add a couple more minutes since they are cold from the fridge.
  4. Transfer to a serving platter and enjoy!

MEAL PREP

These breakfast croissant sandwiches are great to prepare ahead of time and enjoy throughout the week! They make for a great on-the-go breakfast!

  1. Make the eggs and bacon and allow them to cool.
  2. Assemble the sandwiches and wrap each sandwich individually in plastic wrap.
  3. Add all the wrapped sandwiches to a large bag and store in the fridge for 3-4 days or in the freezer for up to 3 months.
  4. Fridge– When ready to enjoy, throw in the air fryer, toaster oven, oven, or microwave until warmed.
  5. Frozen– When ready to enjoy, thaw overnight and warm in the oven or air fryer.

Do I have to use croissants for this breakfast sandwich?

No! You can use your Greek yogurt bagels, classic bagels, or English muffins!

Can I use regular fried eggs instead of scrambled eggs?

Yes, if you want to use classic fried eggs you can totally swap the scrambled eggs for fried eggs!

How do I store leftover breakfast croissant sandwiches?

Cover or transfer the cooled leftover sandwiches into a bag or airtight container and store in the fridge for up to 3-4 days.

Do I have to brush the tops with garlic butter?

No, the garlic butter topping is totally optional! It gives the sandwiches an extra crispy and buttery flavor.

Ingredients

  • 4 large croissants
  • 4 slices colby jack cheese
  • 4 slices deli meat ham or turkey
  • 4 slices bacon cooked & halved
  • 1 ½ Tbsp mayonnaise optional

Scrambled Egg-

  • 4 large eggs
  • 2 Tbsp whole milk
  • ¼ tsp salt or to taste
  • ¼ tsp ground black pepper or to taste
  • chopped green onion or chives optional

Butter Topping-

Instructions

  • Preheat the oven to 375°F and line up the baking with parchment paper.
  • In a bowl, whisk together the ingredients for the scrambled eggs until fully combined.
    4 large eggs, 2 Tbsp whole milk, ¼ tsp salt, or to taste, ¼ tsp ground black pepper, or to taste, chopped green onion or chives, optional
  • Heat a skillet over medium heat and coat with oil or cooking spray. Once hot, pour in the egg mixture and cook, stirring continuously, until the eggs are fluffy and fully set.
  • Remove the eggs from the heat, spread them into an even layer, and cover to keep warm.
  • In a small bowl, combine the melted butter and garlic powder.
    1 Tbsp unsalted butter, melted, ½ tsp garlic powder
  • Cut each croissant in half, lengthwise. Spread mayonnaise or your desired sauce on the inside of both halves, then place them on the prepared baking sheet.
    1 ½ Tbsp mayonnaise, optional, 4 large croissants
  • Fold the ham slices and place them on the bottom half of each croissant. Divide the scrambled eggs into 4 equal portions and place on top of the ham.
    4 slices deli meat, ham or turkey
  • Add one slice of cheese and bacon, then close the sandwich with the top half of the croissant. Repeat with all 4 croissants.
    4 slices colby jack cheese,, 4 slices bacon, cooked & halved
  • Using a pastry brush, brush the tops with the butter mixture.
  • Bake at 375°F for 10-12 minutes, or until the sandwiches are warmed through and the cheese is melted.
  • Serve immediately with your favorite sauces or sides.
