Breakfast Croissant Sandwich

This breakfast croissant sandwich recipe is the ultimate breakfast! Flakey croissants filled with ham, bacon, eggs, and cheese.

Ingredients

  • 4 large croissants
  • 4 slices colby jack cheese halved
  • 4 slices deli meat ham or turkey
  • 4 slices bacon cooked & halved
  • 1 ½ Tbsp mayonnaise
  • 2 tsp oil

egg mixture-

  • 4 large eggs
  • 2 Tbsp whole milk
  • ¼ tsp salt or to taste
  • ¼ tsp ground black pepper or to taste
  • chopped Green onion or chives optional

butter topping-

  • 1 Tbsp unsalted butter melted
  • ½ tsp garlic powder

Instructions

  • Preheat the oven to 375°F.
  • In a bowl, whisk together the eggs, milk, salt, pepper, and chopped greens until fluffy.
  • Heat a skillet with 2 tsp oil, once hot add the scrambled eggs mixture and cook until fluffy and solid. Mix continuously to avoid burning.
  • In a small bowl, combine the melted butter and garlic powder.
  • Cut the croissants in half and spread mayo and any other desired sauce on both sides of each croissant. Lay out on a baking sheet.
  • Start assembling the sandwich by folding the ham and adding it to the croissant and topping it with a slice of cheese.
  • Divide the scrambled eggs into 4 equal parts. Add the eggs on top of the ham and cheese.
  • Top with bacon and finish with the other half of the cheese slice. Close the sandwich with the other half of the croissant.
  • Repeat with all 4 croissant sandwiches. Using a pastry brush, brush the tops of the croissants with the butter mixture.
  • Bake at 375°F for 8-10 minutes, or until the sandwich is warmed through and cheese has melted.
  • Serve immediately with desired sauces and sides.
