In a blender or food processor, blend together the ingredients for the shrimp taco sauce until creamy. Transfer to a bowl and set aside. Add the peeled and deveined shrimp to a bowl and toss with olive oil and blackening seasoning.
1 lb large or jumbo shrimp, peeled and deveined, 1/2 Tbsp olive oil, 1 tsp blackening seasoning
Add the shredded cabbage to a bowl and toss with about 2-3 tablespoons of the taco sauce to make a crunchy slaw mixture. Set aside.
1 1/2 cups shredded cabbage , or slaw mix
Heat a large skillet on medium high heat with butter. Once the skillet is hot, add all the shrimp in a single layer and cook for 1-2 minutes per side, or until pink and opaque.

In a separate skillet, warm the tortillas on both sides until heated through and lightly toasted.

Assemble the shrimp tacos: Spread the taco sauce on the toasted tortillas, then top with cabbage slaw mixture, 3-4 shrimp, and any additional desired toppings.

Serve immediately with additional shrimp taco sauce and on the side.
