SUB IN A TUB
If you love a hearty loaded Italian sandwich, then you need to try this low-carb sub in a tub recipe! Everything you love about an Italian sub minus the bread. Shredded lettuce loaded with deli meats, cheese and fresh veggies all tossed in a creamy and tangy dressing. Serve this sub in a tub with chips for the perfect lunch, meal prep or for a quick dinner!
WHAT YOU NEED-
- Lettuce– You can use either shredded lettuce or romaine for this recipe. I love using pre-shredded lettuce for easier prep.
- Deli Meats– Use your favorite deli meat for this recipe! I love using deli ham, turkey, salami, and pepperoni in this sub in a tub. You can totally swap for your favorite deli meats.
- Cheese– I love using provolone cheese, but you can use different types of sliced cheese! Cheese like provolone, Colby jack, Swiss, or even pepper jack cheese will work.
- Tomatoes– Either cherry tomatoes or diced regular tomatoes will work! Roma tomatoes, Campari tomatoes, or heirloom tomatoes work great.
- Onion– For the best results, I recommend using thinly sliced red onions or sweet onions. You can skip the onions if you prefer.
- Pepperoncini– Banana peppers or peperoncinis can be used for this sub in a tub recipe!
- Hot Pepper Relish– For added flavors, I highly recommend using hot pepper relish.
- Dressing– This sub in a tub comes together with this tangy dressing! The dressing is a combination of olive oil, red wine vinegar, mayo, and Italian seasoning.

QUESTIONS YOU MIGHT HAVE:
A sub in a tub is a viral way of ordering a sandwich without the bread for a lighter, healthier meal.
This is a great make ahead meal prep recipe! Just layer all the ingredients in containers without the dressing, you want to add the dressing in a separate container. Store in the fridge and when ready to enjoy, drizzle in the dressing, toss and enjoy.
No! I love adding mayo to balance out the tang from the red wine vinegar, but you can totally leave it out.
Once this sub salad is tossed in the dressing its best when eaten immediately to avoid soggy leftovers, I do not recommend storing leftovers.
