Ingredients

  • 8 oz lo mein noodles
  • 10 oz shrimp peeled and deveined
  • 2 Tbsp oil for sautéing
  • ½ bell pepper sliced
  • 2 cups coleslaw mix
  • 1 green onion chopped
  • ¼ tsp red pepper chili flakes

Stir Fry Sauce-

Instructions

  • Cook the noodles according to package instructions. Once cooked, drain, and add back into the pot and cover with the lid to keep warm.
  • Peel and devein the shrimp and rinse. Completely pat dry this shrimp. Season with salt and pepper, to taste.
  • In a bowl, add all the ingredients for the lo mein sauce and whisk until well combined.
  • In a skillet or a wok, heat 1 Tbsp oil on medium high heat. Once the oil is hot, add the shrimp and cook for about 4-5 minutes, or until opaque. Remove from the skillet and cover to keep warm.
  • Heat 1 Tbsp oil on medium heat, once hot add the peppers and cook until tender, about 3-4 minutes. Once tender add in the coleslaw mix, green onion, and red pepper flakes and cook until tender.
  • Add the shrimp back into the skillet. Pour in the stir fry sauce mixture and simmer until the sauce thickens.
  • Once the sauce has thickened, add the noodles in and mix until well combined.
  • Top with freshly chopped green onions and sesame seeds and serve immediately.
