Cook the noodles according to package instructions. Once cooked, drain, and add back into the pot and cover with the lid to keep warm.
Peel and devein the shrimp and rinse. Completely pat dry this shrimp. Season with salt and pepper, to taste.
In a bowl, add all the ingredients for the lo mein sauce and whisk until well combined.
In a skillet or a wok, heat 1 Tbsp oil on medium high heat. Once the oil is hot, add the shrimp and cook for about 4-5 minutes, or until opaque. Remove from the skillet and cover to keep warm.
Heat 1 Tbsp oil on medium heat, once hot add the peppers and cook until tender, about 3-4 minutes. Once tender add in the coleslaw mix, green onion, and red pepper flakes and cook until tender.
Add the shrimp back into the skillet. Pour in the stir fry sauce mixture and simmer until the sauce thickens.
Once the sauce has thickened, add the noodles in and mix until well combined.
Top with freshly chopped green onions and sesame seeds and serve immediately.
