GREEK YOGURT BAGELS

Learn to make high protein bagels at home with this simple recipe. With just 5 basic ingredients you can have these soft and chewy Greek yogurt bagels ready in under 30 minutes! With a variety of topping options and bagel flavors you are going to LOVE this easy bagel recipe. Enjoy these plain, toasted or filled with cream cheese or as a sandwich, this recipe is a game-changer for bagel lovers.

WHAT YOU NEED-

  • Flour– Be sure to use high-quality all-purpose flour for this recipe. I recommend Bob’s Red Mill Flour or Arthurs Flour.
  • Greek Yogurt– The key to this recipe is the Greek yogurt, you want to use plain Greek yogurt. Brands like Fage 0% or Chobani work great!
  • Baking Powder– Adding fresh baking powder is the rising factor in these homemade bagels. Be sure to use baking powder NOT baking soda.
  • Salt– To flavor the bagels, you can season with any of your desired seasonings. I like to keep it simple and just season them with salt.
  • Egg– To get beautiful, golden-brown bagels you want to brush the bagels with a whisked egg!

HOW TO MAKE PROTEIN BAGELS

Unlike the classic bagel method, this recipe has no rise time and does not require the water bath method, making it such a quick and easy recipe!

  1. Preheat the oven and line a large baking sheet with parchment paper.
  2. In a bowl, sift together the dry ingredients for the bagels.
  3. Mix in the Greek yogurt until a thick and crumbly dough forms.
  4. Flour your work area and transfer the dough to the area and knead for a couple minutes. You can sprinkle additional flour onto the dough if it is still extremely sticky.
  5. Once the dough is smooth, divide the dough into four equal sized pieces, then shape into balls.
  6. Using your fingers, poke a hole in the center of the dough ball and then gently stretch it out, forming a ring shape. Carefully work your fingers around the hole to make it larger, aiming for a bagel that’s about 2-3 inches in diameter. (The center hole does not need to be too large; you want fluffy round bagels with a slight hole in the center.)
  7. Repeat this with all the dough balls, creating four bagels.
  8. Add the bagels to the lined baking sheet, about 1-2 inches apart from each other.
  9. Using a pastry brush, brush all the bagels with the whisked egg.
  10. Top with desired toppings and bake until golden brown.
  11. Once baked, remove from the oven and cool.
  12. Serve plain or with desired sides.

  • Jalapeno Cheddar– Add garlic powder, shredded cheese, and chopped jalapenos into the dough for a spicy and cheese bagel!
  • Onion & Chive– Add onion powder, garlic powder and freshly chopped chives or green onions to the dough.
  • Cinnamon Raisin– For a sweet bagel, add sugar, cinnamon, and raisins to the dough when mixing. Then top with cinnamon sugar.
  • Blueberry– My personal favorite is the blueberry bagels! Once you mix until crumbly, gently mix in frozen blueberries and then shape. You can also sweeten the dough and top with a cinnamon sugar or streusel topping.
  • Chocolate Chip– Sweeten the dough with sugar and load it up with chocolate chips.

SERVING IDEAS

The possibilities are endless for the ways you can serve these bagels! Here are some of my favorite ways:

  • Classic– Spread the cream cheese on these bagels for a classic bagel, either plain or toasted! Don’t just limit yourself to plain cream cheese but try all the flavored cream cheese that are out there.
  • Lox Bagels– Another popular way to enjoy bagels is by making lox bagels! Toasted bagels with cream cheese, smoked salmon, onions and cucumbers. The perfect lunch or brunch recipe.
  • Bacon Egg & Cheese– Make the classic bacon egg and cheese bagel recipe.
  • Cold Cut Sandwich– Swap out sandwich bread for these bagels instead when making your turkey or deli sandwiches. I love this for lunchtime.
  • Peanut Butter– Spread some peanut butter and top with bananas over the plain bagels.

STORING & FREEZING

Make an extra batch and store them properly for later!

  • Room Temp– Once the bagels are cooled, transfer the bagels into an airtight container and store at room temp for 2-3 days.
  • Fridge– You can store them in the fridge, in an airtight container, for 3-4 days. I recommend that you toast them to soften them up again.
  • Freezer– These bagels freeze GREAT! Once cooled, transfer to a freezer safe bag and freeze for 3-4 months.
    • To Reheat– Just take the frozen bagels and reheat in the oven, toaster, or air fryer.

Ingredients

  • 1 cup all-purpose flour

Instructions

  • Preheat your oven to 400°F and line a large baking sheet with parchment paper.
  • In a large bowl, sift together the flour, salt, and baking powder. Add in the Greek yogurt to the dry ingredients and mix until thick and crumbly dough starts to form.
  • Flour your work surface generously to prevent sticking. Transfer the dough onto the floured surface and knead for a few minutes. If the dough is too sticky, sprinkle a little more flour onto the dough.
  • Once the dough is ready, divide it into 4 equal-sized portions. Roll each portion into a round ball.
  • To shape the bagels, use your fingers to create a hole in the center of each dough ball, gently stretching it out to form a ring. Work your fingers around the hole, expanding it until it is about 2-3 inches in diameter. Keep in mind, the hole should not be too large—just enough to create the classic bagel shape while leaving a fluffy, round center.
  • Repeat this process for all the dough balls.
  • Place the shaped bagels on the prepared baking sheet, spacing them about 1-2 inches apart to allow room for expansion.
  • With a pastry brush, brush each bagel with the whisked egg, coating all the bagels.
  • If desired, sprinkle your favorite toppings—such as sesame seeds, poppy seeds, or everything bagel seasoning—on top of each bagel.
  • Bake at 400℉ for 20-25 minutes, or until they are golden brown and cooked through. Once baked, remove the bagels from the oven and allow them to cool for about 5-10 minutes.
  • Serve the bagels warm or at room temperature, plain or with your favorite spreads and toppings.

Notes

If you want to make flavored bagels, the instructions will be the same, you will just add more ingredients to the dough. You want to add the ingredients after your initial mixing, right before you knead the dough.
Jalapeno Cheddar Bagels– 
  • 1/2 tsp garlic powder
  • 1/4 cup fresh or canned jalapenos, chopped or sliced
  • 1/2 cup shredded mild cheddar cheese
Mix in the garlic powder with the dry ingredients. 
You can mix in the jalapenos and shredded cheese with the dough or add as a topping to the bagels. 
Cinnamon Raisin Bagels
  • 1 tsp granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/3 cup raisins or craisins
Mix in the sugar, cinnamon and raisins in when kneading the dough. 
Top the egg washed bagels with cinnamon sugar. 
Blueberry Bagels
  • 1 tsp granulated sugar
  • 1/3 cup frozen blueberries
Mix in the sugar and blueberries in when kneading the dough. The dough will turn blue from the blueberries, no need to worry. 
Top the egg washed bagels with cinnamon sugar.
